    These Chocolate Chip Bars are chewy gooey bars that come together in one bowl. They are really easy to make and require no chill time!

    These are thick chewy cookie bars full of butter, brown sugar, and gooey chocolate in every bite.

    They're way easier to make than cookies too! Instead of scooping each cookie, you just put the dough into a pan and bake!

    Why this recipe works

    Delicious - Chewy gooey cookie bars that are thick and sweet!

    Easy to make - Everything comes together in one bowl with simple, everyday ingredients.

    No electric mixer - This recipe is so easy you don't even need an electric mixer, just a whisk and spatula.

    Ingredients Notes

    Here are a few staple ingredients used in this recipe. Full details and measurements are in the recipe card below.

    All-purpose flour – Standard all-purpose flour works best here. Any other flour won’t work.

    Butter – I always use unsalted for baking. Make sure it is cooled back down to room temperature. If it is too warm, the cookie bar batter will be too runny.

    Brown sugar – I used light brown sugar. Dark brown sugar works as well.

    Chocolate – I used semi-sweet chocolate chips and mini chocolate chips. You can use one or the other, I just personally prefer using both. You can also use a chopped up milk and dark chocolate bars.

    Eggs - Make sure it is at room temperature before beginning.

    Vanilla - Use high quality vanilla.

    Step by step instructions

    Here is how to make and bake these chocolate chip cookie bars. You will need an 8×8 square pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.

    Step 1 – Prep. Grease the pan. For easy removal of the brownies, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside.

    Step 2 – Whisk wet ingredients. In a large bowl, whisk butter, brown sugar, and white sugar. Then whisk in egg, yolk, and vanilla.

    Step 3 – Add in dry ingredients. Toss in flour, baking powder, and salt. Mix until no dry streaks appear. This will be a runny batter.

    Step 4 – Add chocolate. Toss in chocolate chips and mix in a few more times.

    Step 5 – Transfer and bake. Place the batter into the prepared pan and spread evenly. Add with a sprinkle of extra chocolate if desired. Bake for 22-26 minutes or until the top is a light golden brown.

    Let the cookie bars cool down completely, slice, and enjoy!

    Expert Baking Tips

    Here are a few baking tips from my kitchen to yours!

    • Use high-quality chocolate chips. These ones are my favourite.
    • Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
    • These cookie bars should be slightly underdone when finished baking. They will continue baking as they cool in the hot pan.

    FAQ

    Can I bake these in a different pan?

    Yes, you can bake them in an 9x9 pan but they will be thinner.

    Can I brown the butter?

    Yes, if you want to elevate these cookie bars and take them to the next level, brown the butter.

    Why don't you chill the cookie dough?

    This cookie dough is placed and baked in a pan, so it doesn't have any space to spread like it would if it was scooped into cookies on a cookie sheet. So there's no need to chill the dough!

    Can I scoop these into cookies?

    I haven't tried using this dough in cookie form so I can't say. If you want to make cookies, try baking Classic Chocolate Chip Cookies instead.

    Ingredients
     
     

    • 3/4 cups butter melted and cooled
    • 3/4 cups light brown sugar or dark brown sugar
    • 1/4 cup white sugar
    • 1 egg room temperature
    • 1 egg yolk room temperature
    • 1 tbsp vanilla
    • 2 cups all-purpose flour
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/2 cup semi-sweet chocolate chips
    • 1/2 cup mini chocolate chips

    Instructions
     

    • Grease the pan. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside. Preheat oven to 350°F. Melt the butter and set aside as you prep the rest of the ingredients.
    • In a large bowl, add melted and cooled butter, brown sugar, and white sugar. Whisk until well combined.
      3/4 cups butter, 3/4 cups light brown sugar, 1/4 cup white sugar
    • Add in egg, yolk, and vanilla. Continue whisking.
      1 egg, 1 egg yolk, 1 tbsp vanilla
    • Add in the flour, baking powder, and salt. Using a rubber spatula, gently fold it in until a soft batter forms. It will be runny.
      2 cups all-purpose flour, 1/2 tsp baking powder, 1/2 tsp salt
    • Toss in the semi-sweet and mini chocolate chips and mix in a few times.
      1/2 cup semi-sweet chocolate chips, 1/2 cup mini chocolate chips
    • Pour into the prepared pan and spread out evenly. Top with extra chocolate.
    • Bake for 22-25 minutes or until the blondies are a light golden colour. The bars continue to bake as they cool in the hot pan, so it's okay if they're underbaked when removed from the oven.
    • Let the cookie bars cool completely before slicing, and enjoy! I personally love to have them with a scoop of vanilla ice cream.
