    Oatmeal Chocolate Chip Bars

    Thick and chewy Oatmeal Chocolate Chip Bars! These come together in one bowl and are full of hearty oats and gooey chocolate chips in every bite.

    These oatmeal chocolate chip bars are perfect to bake as a weekend treat or for a potluck. They are soo simple to make, with only a few straight forward steps too!

    Ingredients Notes

    All-purpose flour – This flour is used for the bars.

    Brown sugar – I used dark brown sugar, but light brown sugar works as well!

    Butter - Melted and cooled for 10 minutes before using.

    Cinnamon - Adds some depth to the flavour!

    Chocolate chips – I used semi-sweet chocolate chips. This will be added inside the batter and sprinkled on top! You can use dark if you’d like, but milk will be to sweet.

    Egg – Must be at room temperature before starting your bake.

    Maple syrup - Adds soo much flavour to these bars and really elevates them! You can also use table syrup or honey.

    Oats - Make sure to use rolled oats, also known as large flake oats. Quick oats will not work for this recipe!

    Step by step instructions

    Here is how to make and bake these oatmeal chocolate chip bars. You will need a 9×9 baking pan lined with parchment paper, 2 mixing bowls, a spatula, and a whisk.

    Step 1 – Prep. Grease the pan. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Gently grease the other two sides and then set aside. Then melt the butter and allow it to cool as you prep the rest of the ingredients.

    Step 2 - Mix dry ingredients. In a medium-sized bowl, add in flour, baking soda, baking powder, cinnamon, oats, and salt. Mix together and set aside.

    Step 3 - Whisk butter and sugar. In a large bowl, add in melted and slightly cooled butter and brown sugar. Whisk for 2 minutes until combined.

    Step 4 - Add in wet ingredients. Add in the eggs and whisk for another 2 minutes until paler in colour. Then add in maple syrup and vanilla and whisk for another minute.

    Step 5 - Mix dry ingredients. Add the dry ingredients in and using a spatula, gently fold until a soft cookie dough batter forms. Don't over-mix! Once you don't see any flour streaks stop mixing.

    Step 6 - Add in chocolate chips. Mix in the semi-sweet chocolate chips a few times.

    Step 7 - Transfer and bake. Transfer the bars into your prepared 9x9 baking pan and spread evenly. Top with extra chocolate chips if desired.

    Bake the bars for 25-30 minutes or until a toothpick inserted comes out clean and the edges are a medium brown colour.

    Allow to cool, slice, and enjoy!

    Expert Baking Tips

    • Do not over-mix! A big reason bars don’t rise or turn out tough is because the batter is over-mixed. Once you see no flour streaks, stop mixing.
    • To make ahead of time: Bake, cool, slice, and store in an airtight container or wrap in foil/saran wrap.
    • Use rolled oats. Quick oats will NOT work.

    Ingredients
     
     

    • 2 cups rolled oats
    • 1 1/4 cups all-purpose flour
    • 1 tsp cornstarch
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp cinnamon
    • 1/4 tsp salt
    • 2/3 cups unsalted butter melted and cooled
    • 1/2 cup dark brown sugar
    • 2 eggs
    • 1 tbsp vanilla
    • 3 tbsp maple syrup
    • 3/4 cups semi-sweet chocolate chips plus 1/4 cup on top

    Instructions
