Banana blondies are dense yet soft blondies full of ripe bananas! They are melt-in-your-mouth worthy! Each bite is filled with sweet banana flavour and pockets of melty white chocolate.

Another day, another banana bake. I feel like I always have bananas laying around, and if you're anything like me, you're constantly trying to bake something other than that classic banana bread!
My favourite part about these blondies is the texture. The actual blondie is very soft and moist with a great banana flavour! The pockets of melty white chocolate adds a sweet touch.
Ingredients Notes
Butter – I always use unsalted. This will be melted.
Bananas - The browner, the better. Mash them up with a fork. It's okay if there are chunks.
Chocolate - Use high quality white chocolate. You can use a chopped chocolate bar or chocolate chips.
Eggs - Remove 2 hours before baking.
Step by step instructions
Here is how to make and bake these banana blondies. You will need an 8×8 square pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.
Step 1 – Prep. Grease the pan. For easy removal of the blondies, place parchment paper on the bottom and 2 sides of the pan. Grease the other two sides and then set aside.
Step 2 – Mix butter and sugar. In a large mixing bowl, whisk the melted butter and light brown sugar until well combined, about 2-3 minutes.
Step 3 – Mix in wet ingredients. Add in the bananas and whisk in. Then add in the eggs and vanilla. Continue mixing for 2 minutes. If there are chunks that's okay because of the bananas!
Step 4 – Add in dry ingredients. Toss in flour and salt. Using a spatula, fold until no dry streaks appear. Then add in the white chocolate and mix in.
Step 5 – Transfer and bake. Transfer into the prepared pan and spread out evenly. Add more chocolate on top if desired. Bake the bars for 25-30 minutes.
A toothpick inserted should come out with a few moist crumbs on it. If it is wet, it isn’t ready yet. Continue to bake at 5 minute intervals until the edges are set.
Storing and Freezing
The blondies will keep fresh on the counter for up to 4 days at room temperature or in the refrigerator.
You can also freeze these banana blondies. To freeze, cool the blondies completely. Wrap the squares in plastic wrap or place into a ziplock bag. Freeze for up to 1 month.
When ready to eat, remove from freezer to defrost 1 hour prior to indulging.
FAQ
Can I use chocolate chips instead of a chocolate bar?
Yes! Just make sure you measure it in grams so it’s equivalent to the chopped chocolate, which is 66g.
Do I have to add bananas?
Yes. If you don't want banana blondies, try Oreo Blondies, Dark Chocolate Toffee Blondies, or Coffee Chocolate Chip Blondies.

- 1 cup mashed bananas about 2 medium sized bananas
- 2 eggs room temperature
- 1 tbsp vanilla
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1/2 cup white chocolate chopped
Instructions
- Preheat the oven to 350℉/180℃. Grease an 8×8 inch square pan. For easy removal of the blondies, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set side.
- In a large bowl, whisk the cooled and melted butter and brown sugar. Add in bananas and continue whisking.1 cup butter, 1 cup light brown sugar, 1 cup mashed bananas
- Add in eggs and vanilla and keep on whisking.2 eggs, 1 tbsp vanilla
- Add in flour and salt. Slowly mix in using a spatula until no flour streaks appear. Do not overmix!2 cups all-purpose flour, 1/4 tsp salt
- Toss in white chocolate and mix in a few times.1/2 cup white chocolate
- Transfer into the prepared pan and spread out evenly. Add more white chocolate on top if desired. Bake the bars for 25-30 minutes. A toothpick inserted should come out with a few moist crumbs on it. If it is wet, it isn't ready yet. Continue to bake at 5 minute intervals until the edges are set.
- Remove the pan from the oven and cool the bars on a wire rack before cutting into squares.
