    Peanut Butter Stuffed Cookie Cups

    These delicious and easy-to-make Peanut Butter Stuffed Cookie Cups are every peanut butter lovers dream! The peanut butter cookie cups are baked in a mini muffin tin and stuffed with Reese's peanut butter cups immediately after being removed from the oven. The warm cookie cups are then topped with a sweet heart sprinkle. Add this recipe onto your to-bake list this Valentine's Day!

    I'm a peanut butter lover. Natural, creamy, almond, you name it and I eat it by the spoon. If you're like me, these Peanut Butter Cookie Cups are for you!

    They are soft, chewy, and full of peanut butter flavour. As soon as the cookie cups were finished baking, I placed a Reese's peanut butter cup into the middle of each.

    Personally, Reese's is my all-time favourite sweet. Chocolate? Peanut butter? Together? It doesn't get better than that. If you love the combination as much as I do, you have to try these cups.

    Peanut Butter Cookie Cups

    Ingredients
     
     

    • 4 tbsp butter softened
    • 1/3 cup peanut butter creamy
    • 1/3 cup brown sugar
    • 1/4 cup white sugar
    • 2 tsp vanilla
    • 1 egg room temperature
    • 1/2 tsp baking soda
    • 1 cup flour
    • 25 Mini reese's peanut butter cups
    • 25 heart sprinkles

    Equipment

    1 Mini Muffin Tin

    Instructions
     

    • Preheat oven to 350°F and lightly grease a 12 mini muffin tin.
    • In a large bowl, cream together butter, peanut butter, brown sugar, white sugar, vanilla, and egg with an electric mixer on medium speed until well combined (Approximately 1-2 minutes).
      4 tbsp butter, 1/3 cup peanut butter, 1/3 cup brown sugar, 1/4 cup white sugar, 2 tsp vanilla, 1 egg
    • Add flour and baking soda and mix on low speed all is just incorporated and a light and soft peanut butter dough forms.
      1 cup flour, 1/2 tsp baking soda
    • Scoop & roll dough into 1 tablespoon sized balls using your hands and place each ball into a greased, mini muffin tin.
    • Bake for 8-9 minutes. The cookie cups will rise quite a bit and look soft. This is how you want them to look.
    • Remove from oven and immediately press one mini Reese's peanut butter cup into the center of each cookie cup.

    • The Reese's will begin to melt. Once this happens, place a heart sprinkle into the middle of each cup.
    • Either place into fridge to allow the Reese's to reharden, or eat while chocolate remains melted and peanut butter cup is warm.
