    Apple Cinnamon Oatmeal Cookies

    Soft and chewy cinnamon apple oatmeal cookies are filled with sweet apple flavour! It is a chewy cookie that has apple pieces, walnuts, and cinnamon throughout. After the cookies are baked, they're topped with a sweet maple glaze.

    These are soft and chewy cookies. They have small pieces of apples inside, along with applesauce, for all the apple flavours!

    Once the cookies are baked and cooled, they're finished with a drizzle of a simple 3 ingredient maple glaze.

    Why this recipe works

    Easy to make - Everything is made in one bowl with simple ingredients you probably already have in your pantry!

    Fall festive bakes - This is a perfect treat to make if you have some apples laying around after apple picking this fall!

    Apples - Full of sweet sliced apples and applesauce!

    No mixer- This recipe doesn't need a mixer! It is all made by hand.

    Oatmeal cookies - Thick, soft, and chewy oatmeal cookies that are so cozy.

    Ingredients Notes

    Here are a list of a few ingredients used, the full recipe card is down below

    Apples - Any apples work, I used honeycrisp apples. Just make sure they are cubed into small chunks and you only have 1/2 cup of them. Any more and the dough will be too moist and spread to much in the oven.

    Brown sugar - I used light brown sugar, but dark works as well.

    Butter – I used unsalted butter. This will be melted!

    Eggs – Remove these two hours prior to baking.

    Flour – All-purpose flour is used.

    Oats - I used rolled oats. This is also called old-fashioned oats in some places.

    Walnuts - I used these ones. Adds a nice crunch to the cookies.

    Step by step instructions

    Here is how to make and bake these apple cinnamon oatmeal cookies. You will need one tray lined with parchment paper, a large mixing bowl, a spatula, a whisk, and a standard ice cream scoop.

    Step 1 - Whisk the wet ingredients. Whisk the slightly cooled melted butter, applesauce, brown sugar, and white sugar until well combined.

    Step 2 - Add in egg and vanilla. Whisk in the egg and vanilla and continue whisking until well combined.

    Step 3 - Mix in dry ingredients. Add flour, oats, baking soda, salt, and cinnamon. Using a spatula, gently fold it in until a soft dough forms.

    Step 4 - Add in walnuts and apples. Add in the chopped walnuts and cubed apple pieces.

    Step 5 – Scoop and bake! Scoop 6 cookie dough balls per prepared baking trays. Space the cookies 2-3 inches apart from one another and bake the cookies until the edges are a light golden brown, about 13-15 minutes.

    Expert Baking Tips

    Here are a few baking tips from my kitchen to yours

    • Use a gram scale for the most accurate measurements. To convert this recipe, click the ‘metric’ button next to the ingredients title on the recipe card.
    • Chop the apples into small chunks. If they are to big it will affect the cookie texture and spreading.
    • Optional: If you chop the apples first and want to prevent them from browning, coat them in 1 tsp of lemon juice. Apples turn brown because of an enzyme in them. Since lemon juice contains citric acid and is an anti-oxidant, when it's squeezed into the cubed apples, it helps to prevent the oxidation.
    • If the dough is to soft to form cookie dough balls with, chill for 30 minutes.

    FAQ

    Can I use any apples?

    Yes, I used honeycrisp but granny smith or gala would be good too!

    My dough is so sticky?

    This could be because there is to much moisture from the apples in the dough. If it is runny, add 1 tbsp of flour and mix in. But if it's sticky, just stick it in the refrigerator for 30 minutes to set a bit. Then scoop and bake your cookies!

    Ingredients
     
     

    For the cookies

    • 1/4 cup unsalted butter melted and slightly cooled
    • 1/3 cup applesauce
    • 3/4 cups dark brown sugar light brown works too
    • 1/3 cup white sugar
    • 1 egg room temperature
    • 1 tbsp vanilla
    • 2 cup rolled oats
    • 1 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1 cup all-purpose flour
    • 1/2 cup finely chopped apples
    • 1/4 cup walnuts chopped

    Maple Glaze

    • 3/4 cups icing sugar
    • 1 tbsp maple syrup
    • 1 tbsp vanilla

    Equipment

    Dark Non-Stick Baking Tray
    Parchment Paper
    Cookie Scooper

    Instructions
     

    • Preheat oven to 350°F/180°C and line two baking trays with parchment paper. Set aside.
    • In a large bowl, whisk together butter, white sugar, brown sugar, and applesauce. Whisk until well combined.
      1/4 cup unsalted butter, 1/3 cup applesauce, 3/4 cups dark brown sugar, 1/3 cup white sugar
    • Add in egg and vanilla and continue whisking.
      1 egg, 1 tbsp vanilla
    • Add in flour, oats, nutmeg, cinnamon, salt, baking soda and baking powder. Using a spatula, gently fold until a soft cookie dough forms.
      2 cup rolled oats, 1 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 cup all-purpose flour, 1/4 tsp salt
    • Add in chopped apples and walnuts and mix in a few times.
      1/2 cup finely chopped apples, 1/4 cup walnuts
    • *If your dough is sticky and way to soft, stick in the refrigerator for 30 minutes prior to scooping*.
      Scoop 6 cookie dough balls on each tray at a time. Bake for 13-15 minutes or until the edges are a light golden brown and the middle is slightly puffy. The cookies shouldn't spread out to much.
    • As the cookies cool, make the maple glaze by adding the maple syrup, icing sugar, and vanilla into a small bowl and mix. Once cooled, drizzle the cookies with the glaze, allow to set, and enjoy!

      Is there anything that can be used in place of applesauce? The only applesauce sold in my country is the sweetened kind that you're meant to serve with savoury dishes, not baking appropriate.

        Hi Allen. Unfortunately, this recipe is applesauce based so I can't suggest anything else. There are lots of other cookie recipes on my blog that don't use applesauce though! 🙂
