Preheat oven to 350°F/180°C and line two baking trays with parchment paper. Set aside.
In a large bowl, whisk together butter, white sugar, brown sugar, and applesauce. Whisk until well combined.

Add in egg and vanilla and continue whisking.

Add in flour, oats, nutmeg, cinnamon, salt, baking soda and baking powder. Using a spatula, gently fold until a soft cookie dough forms.

Add in chopped apples and walnuts and mix in a few times.

*If your dough is sticky and way to soft, stick in the refrigerator for 30 minutes prior to scooping*. Scoop 6 cookie dough balls on each tray at a time. Bake for 13-15 minutes or until the edges are a light golden brown and the middle is slightly puffy. The cookies shouldn't spread out to much. As the cookies cool, make the maple glaze by adding the maple syrup, icing sugar, and vanilla into a small bowl and mix. Once cooled, drizzle the cookies with the glaze, allow to set, and enjoy!
