Apple Oatmeal Cookies

Soft and chewy cinnamon apple oatmeal cookies are filled with sweet apple flavour! It is a chewy cookie that has apple pieces, walnuts, and cinnamon throughout. After the cookies are baked, they're topped with a sweet maple glaze.

  • Preheat oven to 350°F/180°C and line two baking trays with parchment paper. Set aside.
  • In a large bowl, whisk together butter, white sugar, brown sugar, and applesauce. Whisk until well combined.
    1/4 cup unsalted butter, 1/3 cup applesauce, 3/4 cups dark brown sugar, 1/3 cup white sugar
  • Add in egg and vanilla and continue whisking.

  • Add in flour, oats, nutmeg, cinnamon, salt, baking soda and baking powder. Using a spatula, gently fold until a soft cookie dough forms.
    2 cup rolled oats, 1 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 cup all-purpose flour, 1/4 tsp salt
  • Add in chopped apples and walnuts and mix in a few times.

  • *If your dough is sticky and way to soft, stick in the refrigerator for 30 minutes prior to scooping*.
    Scoop 6 cookie dough balls on each tray at a time. Bake for 13-15 minutes or until the edges are a light golden brown and the middle is slightly puffy. The cookies shouldn't spread out to much.
  • As the cookies cool, make the maple glaze by adding the maple syrup, icing sugar, and vanilla into a small bowl and mix. Once cooled, drizzle the cookies with the glaze, allow to set, and enjoy!
