    This single serve triple chocolate chip cookie makes one cookie just for you! It's gooey and loaded with so much chocolate. The cookie is full of chocolate chips, cocoa powder, and chocolate banana seed butter.

    This recipe is perfect for that one single serve cookie! It is made using Healthy Crunch's Single Serve Chocolate Banana Seed Butter. The seed butter makes the perfect consistency for this cookie recipe.

    Why have a regular sized cookie when you can make a giant one!? This giant cookie is way easier to make than a dozen regular sized ones.

    • No chill time – as an impatient baker, this one is so important!
    • Egg-free - No eggs are required in this recipe!

    Seed Butter - I used Healthy Crunch's Chocolate Banana Single Seed Butter. It's conveniently packed in a squeeze pack, so you just tear and pour the seed butter straight into the bowl! No mess.

    Butter – Unsalted. This will be melted.

    Chocolate chips – Semi-sweet are used. Dark may be used as well, but milk will be too sweet. You may also omit it completely!

    Step by step instructions

    Here is a more detailed step-by-step than the recipe card. Scroll down for a full recipe video and measurements.

    Step 1 - Prep. Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.

    Step 2 - Whisk the wet ingredients. Place the melted butter and brown sugar in a medium bowl and whisk until smooth. Add in the seed butter and vanilla and continue mixing using a spatula.

    Step 3 - Add in dry ingredients. Toss in flour, baking powder, salt, and cocoa powder. Mix until a thick dough combines. Add in chocolate chips and mix.

    Step 4 - Bake. Roll the cookie into a ball and place in the middle of your prepared cookie sheet. Bake for 13 minutes or until the edges are set but the centre is still gooey.

    Step 5 - Cool. Allow the cookie to cool for 10 minutes and then dig in! Enjoy.

    Expert Baking Tips

    • Use one pack of seed butter. This will be the perfect amount for your giant single serve cookie.
    • Press the cookie down gently before baking if you want crispier edges and more of a flatter cookie.
    • Brown the butter for next level baking!
    • Use flakey sea salt on top to balance the sweetness!

    FAQ

    Can I divide this into two cookies?

    Totally! The baking time will be less so make sure to keep an eye on it after 9 minutes.

    How do I store this cookie?

    Once baked, allow to cool down completely. Store the cookie in an airtight bag or container for up to 5 days in the fridge.

    Can I freeze this cookie?

    I would not recommend freezing the cookie. Since it is a single serve, it is meant to satisfy cravings quick. If you're interested in cookies you can freeze, check out my cookies page.

    Ingredients
     
     

    • 2 tbsp butter melted
    • 3 tbsp brown sugar
    • 1 pack Healthy Crunch's Chocolate Banana Seed Butter Single Serve
    • 1 tbsp vanilla
    • 1 1/2 tbsp unsweetened cocoa powder
    • 1/8 tsp baking powder
    • 4 tbsp all-purpose flour
    • pinch of salt
    • 2 tbsp semi-sweet chocolate chips

    Instructions
     

    • Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
    • Place the melted butter and brown sugar in a medium bowl and whisk until smooth.
      2 tbsp butter, 3 tbsp brown sugar
    • Add in the seed butter and vanilla and continue mixing using a spatula.
      1 pack Healthy Crunch's Chocolate Banana Seed Butter Single Serve, 1 tbsp vanilla
    • Toss in the flour, cocoa powder, baking powder, and salt. Gently fold until a dough forms.
      1 1/2 tbsp unsweetened cocoa powder, 1/8 tsp baking powder, 4 tbsp all-purpose flour, pinch of salt
    • Toss in the chocolate chips and fold just a few times until incorporated.
      2 tbsp semi-sweet chocolate chips
    • Roll the cookie into a ball and place in the middle of your prepared cookie sheet. You may flatten it gently if you'd like to get a thinner, wider cookie.
    • Bake at 350°F for 13 minutes or until the edges are set but the center is still gooey. Remove from oven. Allow to cool for 10 minutes on the baking sheet until set. Enjoy!
