These peanut butter oatmeal bars are such a treat! They're healthier oatmeal bars that come together in one bowl. If you have browning bananas on your counter, you have to give them a try.

I love that this recipe is perfect for a grab-and-go breakfast. I like to make them ahead of time, and then have them prepped for the week ahead.

The bars do not have any flour in them, so it's very easy to make them gluten-free by just using gluten-free oats. The combination of creamy peanut butter, oats, chocolate, maple syrup, and ripe bananas is amazing.

If you're looking for healthier peanut butter banana oatmeal bars or a delicious chocolate chip oatmeal bar recipe, this family-friendly favorite is one you'll make again and again. Let's get to baking!

    Step by step instructions

Here is how to make and bake this Peanut Butter Banana Oatmeal Chocolate Chip Bars. You will need a 9x9 baking pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.

Step 1 - Mix together dry ingredients. In a medium-sized bowl, add in rolled oats, baking powder, and cinnamon. Mix together and set aside.

Step 2 - Whisk wet ingredients. In a large bowl, add the mashed bananas, maple syrup, peanut butter, egg, and vanilla. Whisk until well combined.

Step 3 - Combine. Add the dry and wet ingredients together and mix until a soft batter forms. Then gently mix in the chocolate chips a few times.

Step 4 - Transfer and bake. Add into the prepared pan and spread evenly. Sprinkle extra chocolate chips on top. Bake for 25-30 minutes or until a toothpick inserted comes out clean.

Allow to cool, then slice and enjoy!

    FAQ

How do I store these bars?

I like to make these ahead of time for the week. Store them in an airtight container on the counter for up to 5 days. You may also store them in the refrigerator for up to 1 week.

Can I use crunchy peanut butter?

Yes. You may use any nut butter as long as it is not natural. Natural butters are to runny and will ruin the bake.

    Can I use quick oats?

Yes! Quick oats will work in this recipe, though the bars will have a softer texture. Rolled oats provide a heartier, chewier bite.

    My bars are falling apart!?

The bars need time to cool before slicing. If you cut them while they are still warm, they will fall apart.

Can I freeze these oatmeal bars?

Absolutely. Let the bars cool completely, then slice them and place them in a freezer-safe container or wrap each one individually (ideal for grab-and-go snacks).

Freeze for up to 3 months and thaw at room temperature when ready to eat.

    Notes

Peanut butter: You may use creamy or crunchy peanut butter. Do not use natural peanut butter, it is too runny and won't work!
Maple syrup: Table syrup or honey also works great if you don't have any maple syrup on hand.
Oats: Rolled oats give a chewier bar, but quick oats also work! They will give them a softer texture.
