  • Preheat the oven to 350℉/176℃ and line a 9x9 pan with parchment paper and set aside.
  • Combine oats, cinnamon, and baking powder. Stir together and set aside.
    2 1/2 cups rolled oats*, 1 1/2 tsp cinnamon, 1 tsp baking powder
  • In a large bowl, whisk together bananas, peanut butter, maple syrup, egg, vanilla.
    1 1/2 cups ripe bananas, 1/4 cup maple syrup, 1 tbsp vanilla, 3/4 cups creamy peanut butter, 1 large egg
  • Combine together until a soft batter forms.
  • Mix in the chocolate chips.
    3/4 cups semi-sweet chocolate chips
  • Transfer into the prepared pan and spread evenly. Sprinkle chocolate chips on top and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • Allow to cool, then slice and enjoy!

Notes

Peanut butter: You may use creamy or crunchy peanut butter. Do not use natural peanut butter, it is too runny and won't work!
Maple syrup: Table syrup or honey also works great if you don't have any maple syrup on hand.
Oats: Rolled oats give a chewier bar, but quick oats also work! They will give them a softer texture.
