    These brown butter brownies are the fudgiest brownies ever! They are made with loads of brown butter, cocoa powder, and chocolate chunks. They have the perfect crinkle brownie top and are super easy to make.

    These brownies are fudgy and rich brownies full of incredible deep chocolate flavour. They have cocoa powder and dark chocolate chunks inside the batter.

    Elevate your brownies with using browned butter! Transforming butter into browned butter is simple but makes such an amazing impact on your brownies. It only requires one ingredient too: butter!

    These brownies come together in one bowl and are SO easy to make. They are perfect to bake for a family gathering or bake sale!

    Ingredients Notes

    Here are a few of the staple ingredients we’ll be using in this recipe

    Eggs – This helps provide that crinkle brownie top we all love.

    Cocoa powder – I used unsweetened cocoa powder.

    Butter – I always use unsalted. This will be melted and browned. Using butter in brownies helps keep them soft and chewy.

    Brown sugar – I used light brown sugar, but dark works as well. Both sugars bring a chewy texture and keeps the brownies dense.

    What is brown butter?

    Brown butter is butter that has been melted in a pot until the milk solids turn a deep amber brown. It takes about 5 minutes to make from start to finish.

    I recommend making the brown butter first, so it can cool as you prep the rest of your ingredients.

    As the butter cooks on the stovetop, the water from it evaporates and the milk solids begin to caramelize from the heat. This gives the butter that nutty flavour and aroma we all love.

    If you're melting butter, you may as well brown it! It changes the baking game.

    Step by step instructions

    Here is how to make and bake these brown butter brownies. You will need an 8×8 square pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.

    Step 1 – Prep. Grease the pan. For easy removal of the brownies, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside.

    Step 2 - Brown the butter. Brown the butter: Melt the butter in a medium sized pan over medium heat. Once it melts, it will crackle, then become foamy – continue mixing the butter while this happens to prevent burning.

    The butter will go from melted to golden brown quickly, and you'll know it's almost done when the aroma of browned butter arrives and the milk solids turn an amber brown. The whole process should take about 5 minutes!

    Once golden, remove from heat and transfer to a glass bowl. Let the butter cool for 30 minutes (Do not let it harden) while you prep on the rest of the recipe.

    Step 3 - Whisk in the sugar. Add the brown sugar and mix until well combined. It's okay if it's grainy! Then add in the eggs and vanilla and continue whisking.

    Step 4 - Add in dry ingredients. Add in the cocoa powder, flour, salt, and using a spatula fold until a brownie batter forms. Lastly, add in the chocolate chunks.

    Step 5 - Transfer and bake. Spread the brownie batter in the prepared pan evenly. Add extra chocolate chips/chunks on top if desired!

    Step 6 - Bake! Bake the brownies for roughly 25 minutes or until the edges are set and a toothpick inserted comes out fudgy. If it's wet, the brownies aren't ready yet.

    Add a dash of sea salt on top once they are baked and out of the oven! This is optional, but really intensifies the flavour and balances the sweetness. Cool the brownies and enjoy!

    Expert Baking Tips

    Here are a few baking tips from my kitchen to yours!

    • Make sure the brown butter is not hot when adding in the eggs. You don’t want to cook them!
    • Measure the flour accurately. Spoon it – don’t directly put the measuring cup into the bag of flour. Use a gram scale for the most accurate measurements.
    • Add a dash of sea salt on top of the brownies to elevate these brownies even more!

    Can I use unsweetened natural cocoa powder?

    Yes. 

    Do I have to brown the butter?

    If you’re melting it, you may as well brown it! The browned butter adds a delicious nutty flavour and aroma that brings these brownies to the next level.

    Can I use chocolate chips?

    Of course! Chocolate chips, chopped up chocolate bar, chocolate chunks..they all work!

    Ingredients
     
     

    • 3/4 cups unsalted butter melted and browned
    • 1 1/2 cups light brown sugar
    • 3 eggs room temperature
    • 1 tbsp vanilla
    • 1/2 cup chocolate chunks
    • 3/4 cups cocoa powder
    • 3/4 cups all-purpose flour
    • 1/2 tsp salt
    • flakey sea salt optional

    Instructions
     

    • Preheat the oven to 350°F/180°C. Line a square 8×8 baking pan with parchment paper and set it aside.

    • In a large bowl, mix together the browned butter and light brown sugar. You may use a whisk or spatula.
      1 1/2 cups light brown sugar
    • Add in the eggs and vanilla and continue whisking.
      3 eggs, 1 tbsp vanilla
    • Add in the cocoa powder, flour, and salt. Using a spatula, gently fold in the dry ingredients until a soft brownie batter forms.
      3/4 cups cocoa powder, 3/4 cups all-purpose flour, 1/2 tsp salt
    • Toss in the chocolate chunks and mix in a few times. Don't over-mix!

    • Transfer into prepared baking pan. Bake for 25-30 minutes. The top will no longer look shiny, and the edges will be set. A toothpick inserted should come out with moist crumbs, not wet like batter. If it's wet, they're not ready, so bake for an additional 5 minutes.
    • Allow the brownies to cool before slicing. If you slice them while they're warm, they will fall apart. Sprinkle some sea salt if you'd like, slice, and enjoy!
