Think classic banana bread, but instead of a loaf pan, baked in a 9x9 pan and way more soft and gooey. Made with sweet chocolate, ripe bananas, and simple ingredients, it bakes into a cross between banana bread, baked oats, and soft chocolate cake. I'm obsessed!

    If you know me, you know I always have browning bananas on my counter and am trying to figure out what to do with them! From cookies to muffins, we've baked them all on the blog together.

    This easy banana chocolate bake with oats is a cross between classic banana bread, baked oats, and a classic chocolate cake. I added oats for structure, and it creates the best texture.

    Everything gets whisked together in one bowl with simple ingredients. It's a great recipe for meal prep, you just slice and enjoy!

    Step by step instructions

    Here is how to make and bake these Banana Chocolate Bake. You will need a 9×9 baking pan lined with parchment paper, 3 mixing bowls, a whisk, and a spatula.

    Step 1 - Mix dry ingredients. Combine flour, oats, cocoa, baking soda, cinnamon, cornstarch, and salt. Stir to combine and set aside.

    Step 2 - Whisk eggs and sugar. In a large bowl, combine eggs and brown sugar until light and fluffy (2-3 minutes).

    Step 3 - Whisk in wet ingredients. Add in the mashed bananas, oil, vanilla, and milk. Continue whisking until combined (may be clumpy from bananas, that is normal).

    Step 4 - Add in dry ingredients. Combine gently with a spatula until almost completely combined, then sprinkle in the chocolate chips and mix just until the dry streaks disappear.

    Step 5 - Bake. Transfer into the prepared pan and spread evenly. Sprinkle extra chocolate chips on top.

    The bars bake for 40-55 minutes, they are ready when a toothpick inserted comes out slightly fudgy, but not wet with raw batter.

    Allow to cool in the pan before slicing. These bars are a soft baked oatmeal, so they have to set completely before slicing or else they will fall apart.

    How do I store these bars?

    These bars are best stored in an airtight container on the counter for up to 3 days, or in the refrigerator for up to 1 week.

    Is this more like baked oatmeal or a cake?

    It's in the middle! It's soft and cozy like baked oats, but rich and decadent like a chocolate cake.

    Can I add nuts or any other mix-in?

    Definitely! Chopped walnuts, pecans, or peanuts would be so good in these.

    Can I use quick oats instead of rolled oats?

    I haven't tried this recipe using quick oats, so I can't guarantee this would work. This recipe is very liquid-heavy, and since quick oats are quite smaller, I'm not sure how they would absorb and bake.

    Ingredients
     
     

    • 3 1/2 cups rolled oats
    • 1/3 cup cocoa powder sifted 35g
    • 1/2 tsp baking soda
    • 1 1/2 cups bananas about 3 large
    • 3/4 cups milk room temperature
    • 1/2 cup dark brown sugar
    • 1/4 cup oil
    • 3 large eggs room temperature
    • 1 tbsp vanilla
    • 1 tsp cornstarch
    • 1/2 tsp cinnamon
    • 1/4 tsp salt
    • 3/4 cups semi-sweet chocolate chips

    Instructions
     

    • Preheat the oven to 350℉/176℃ and line a 9x9 baking tray with parchment paper.
    • In a bowl, mix together the flour, rolled oats, cocoa powder, baking soda, cornstarch, cinnamon, and salt. Stir together and set aside.

    • In another large bowl, add in the brown sugar and eggs. Whisk together for 2-3 minutes until light and air bubbles have formed.
      1/2 cup dark brown sugar, 3 large eggs
    • Add in the bananas, milk, oil, and vanilla. Continue whisking. The mixture may be clumpy from the mashed bananas, and that is normal!
      1 1/2 cups bananas, 3/4 cups milk, 1/4 cup oil, 1 tbsp vanilla
    • Mix in the dry ingredients until no more flour streaks appear, then mix in the chocolate chips. The batter will be liquidy.
      3/4 cups semi-sweet chocolate chips
    • Transfer into the prepared pan and spread evenly, then sprinkle with extra chocolate chips.
    • Bake for 40-55 minutes or until a toothpick inserted in the middle comes out fudgy, and not raw batter.
    • Allow to cool completely, then slice and enjoy! As it cools, the bake sets, so if you slice warm it will fall apart (it'll still be delicious though!)

    Notes

    Oats: Make sure to use large flake oats, or rolled oats, as they absorb the liquid best in this recipe. This recipe is very liquid-based, so I believe quick oats would be to small and won't be able to absorb as well.
