Banana Chocolate Bake

  • Preheat the oven to 350℉/176℃ and line a 9x9 baking tray with parchment paper.
  • In a bowl, mix together the flour, rolled oats, cocoa powder, baking soda, cornstarch, cinnamon, and salt. Stir together and set aside.
    3 1/2 cups rolled oats , 1/3 cup cocoa powder, 1/2 tsp baking soda, 1 tsp cornstarch, 1/4 tsp salt, 1/2 tsp cinnamon
  • In another large bowl, add in the brown sugar and eggs. Whisk together for 2-3 minutes until light and air bubbles have formed.

  • Add in the bananas, milk, oil, and vanilla. Continue whisking. The mixture may be clumpy from the mashed bananas, and that is normal!
    1 1/2 cups bananas, 3/4 cups milk, 1/4 cup oil, 1 tbsp vanilla
  • Mix in the dry ingredients until no more flour streaks appear, then mix in the chocolate chips. The batter will be liquidy.
    3/4 cups semi-sweet chocolate chips
  • Transfer into the prepared pan and spread evenly, then sprinkle with extra chocolate chips.
  • Bake for 40-55 minutes or until a toothpick inserted in the middle comes out fudgy, and not raw batter.
  • Allow to cool completely, then slice and enjoy! As it cools, the bake sets, so if you slice warm it will fall apart (it'll still be delicious though!)

Notes

Oats: Make sure to use large flake oats, or rolled oats, as they absorb the liquid best in this recipe. This recipe is very liquid-based, so I believe quick oats would be to small and won't be able to absorb as well.
