    Peach Oatmeal Muffins

    These Peach Oatmeal Muffins are such a delicious treat for the season! They have an incredible texture, are perfectly soft and fluffy, and are filled with hearty oats and sweet juicy peaches in every bite.

    The touch of cinnamon in these muffins adds the perfect warmth! They are hearty, flavourful, and a wonderful way to use fresh peaches during the season.

    My favourite way to enjoy them is as a wholesome breakfast treat, but they are delicious for any time of the day.

    Step by step instructions

    Here is how to make and bake these Peach Oatmeal Muffins. You will need a 12 muffin tin, muffin liners, 2 mixing bowls, a spatula, and a whisk.

    Step 1 – Prep. Line your muffin tin with liners and set aside. I used tulip liners, but regular liners work as well. If you need a recommendation, this is my favourite tin.

    Step 2 – Mix together dry ingredients. In a medium-sized bowl, add in the dry ingredients; flour, oats, baking soda, baking powder, cinnamon, salt, and cornstarch. Mix and set aside.

    Step 3 – Mix wet ingredients. In a large bowl add the oil, butter, eggs, brown sugar, vanilla, and sour cream. Whisk until smooth.

    Step 4 - Combine together. Add the dry and wet ingredients together and combine just until the flour streaks disappear.

    Step 5 - Mix in peaches. Add the sliced peaches in and mix a few times to evenly distribute them.

    Step 6 - Scoop and bake. Scoop and divide the batter into the liners evenly. I used tulip liners, but regular liners work as well. Add extra peach slices and sprinkle some white sugar on top (optional).

    Step 7 - Bake. The muffins will bake for 20-25 minutes or until a toothpick inserted in the middle comes out dry. Allow to cool and enjoy!

    FAQ

    How do I store these?

    These muffins stay good on the counter for the first two days. To store them longer, place them in an airtight container and in the refrigerator for up to 1 week.

    Can I use frozen peaches?

    Fresh peaches always work best. If you have frozen ones on hand, allow them to thaw completely and then drain the liquid from them and pat them dry. Slice them into small pieces and continue the recipe on from there.

    Ingredients
     
     

    • 1 1/2 cups all-purpose flour
    • 1 1/4 cups rolled oats
    • 1 tsp baking powder
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 1/4 tsp cinnamon
    • 2/3 cups oil
    • 1 cup sour cream or greek yogurt
    • 3/4 cups light brown sugar
    • 2 eggs room temperature
    • 1 tsp vanilla
    • 2 cups peaches chopped into small pieces*

    Instructions
     

    • Preheat the oven to 375℉/190℃ and line a muffin tin with 12 liners. Set aside. Slice the peaches into small pieces and set aside as well.
    • In a large bowl, add the flour, oats, baking soda, baking powder, cornstarch, cinnamon, and salt. Stir to combine and set aside.
    • In another large bowl, add the brown sugar, eggs, vanilla, and sour cream. Whisk until smooth (1-2 minutes).
    • Add in the dry ingredients and with a spatula, gently fold to combine and form a soft muffin batter.
    • In the bowl with the peaches, add 1 tsp of flour and gently toss them around to evenly coat them. Then add them into the bowl and mix just until combined.
    • Scoop and divide the batter evenly between the liners. Add a few extra peaches on top and sprinkle white sugar (optional, but recommended).
    • Bake the muffins for 20-25 minutes or until a toothpick inserted comes out clean. Allow to cool, and enjoy!

    Notes

    Peaches - It's important to slice the peaches into small pieces or else they will sink to the bottom of the muffins as they bake.
