These Peach Oatmeal Muffins are such a delicious treat for the season! They have an incredible texture and are filled with hearty oats and sweet juicy peaches in every bite.
Preheat the oven to 375℉/190℃ and line a muffin tin with 12 liners. Set aside. Slice the peaches into small pieces and set aside as well.
In a large bowl, add the flour, oats, baking soda, baking powder, cornstarch, cinnamon, and salt. Stir to combine and set aside.
In another large bowl, add the brown sugar, eggs, vanilla, and sour cream. Whisk until smooth (1-2 minutes).
Add in the dry ingredients and with a spatula, gently fold to combine and form a soft muffin batter.
In the bowl with the peaches, add 1 tsp of flour and gently toss them around to evenly coat them. Then add them into the bowl and mix just until combined.
Scoop and divide the batter evenly between the liners. Add a few extra peaches on top and sprinkle white sugar (optional, but recommended).
Bake the muffins for 20-25 minutes or until a toothpick inserted comes out clean. Allow to cool, and enjoy!
Notes
Peaches - It's important to slice the peaches into small pieces or else they will sink to the bottom of the muffins as they bake.
