- Brown sugar – I used light brown, but dark brown works too.
- Butter - I used unsalted butter. This will be melted.
- Chocolate chips - I used mini chocolate chips and recommend you do the same. Since they are small, it helps prevent the chocolate from sinking to the bottom.
- Coconut - Unsweetened shredded coconut is used in this recipe. You can also use sweetened shredded coconut, but the bars will be sweeter (obviously haha).
- Eggs – Remove 2 hours before baking.
- Flour – All-purpose flour is used in this recipe.
- Oats - Rolled oats are used in this recipe for their hearty texture. These oats are also called old-fashioned or large-flake oats in some stores. Don't use quick oats, they are thin and the consistency will not turn out the same.

Step by step instructions
Here is how to make and bake these Oatmeal Coconut Chocolate Chip Bars. You will need a 9×9 baking pan lined with parchment paper, two large mixing bowls, a whisk, and a spatula.
Step 1 – Prep. Grease the pan. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Gently grease the other two sides and then set aside.
Step 2 – Mix dry ingredients. In a large bowl, add in flour, cinnamon, rolled oats, cornstarch, baking powder, baking soda, coconut, and salt. Stir to combine and set aside.
Step 3 – Mix the wet ingredients. In another large bowl, add melted and slightly cooled butter, oil, and brown sugar. Mix for 2-3 minutes until well combined.


Step 4 - Add in more wet ingredients. Whisk in the eggs for another 2-3 minutes, until the mixture is paler in colour and air bubbles are forming. Then mix in the maple syrup and vanilla until just combined.


Step 5 - Add the dry ingredients. Add the dry into the wet and using a spatula, mix until just combined and no flour streaks appear. Do not over-mix!


Step 6 - Mix in chocolate chips. Add in the mini chocolate chips and mix until just combined. Do not over-mix!


Step 7 - Transfer and bake. Transfer the dough into the prepared pan and spread evenly. Add extra chocolate chips on top (optional).

Bake the bars for 25-35 minutes. The bars are ready when the edges will be a golden brown colour, and a toothpick inserted will come out clean.

Expert Baking Tips
Here are a few baking tips from my kitchen to yours!
- Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
- Use rolled oats. Quick oats are smaller and don't cook the same!
- Use mini chocolate chips. This will give you little pockets of chocolate in every bite, and not be to over-powering so you can still taste the coconut.

Ingredients
- 1 1/2 cups rolled oats or large-flake oats
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp cinnamon optional
- 1 tbsp cornstarch
- 1/4 tsp salt
- 3/4 cups butter melted and slightly cooled
- 3 tbsp flavourless oil I used canola oil
- 1 cup light brown sugar or dark brown
- 2 eggs room temperature
- 1 tbsp vanilla
- 3 tbsp maple syrup or table syrup
- 1 cup shredded coconut unsweetened
- 1/2 cup mini chocolate chips plus more for topping
Instructions
- Preheat the oven to 350℉/170℃. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Gently grease the other two sides and then set aside.
- In a medium sized bowl, add in flour, cinnamon, rolled oats, cornstarch, baking powder, baking soda, coconut, and salt.
