    No Bake Coconut Oatmeal Chocolate Chip Bars

    These are super easy No Bake Coconut Oatmeal Chocolate Chip Bars! They are perfect for the hot weather. Every bite is full of delicious coconut, hearty oats, and sweet chocolate.

    I love how easy these bars are! The summer heat has put me on a no bake kick.

    The bars come together in just a few minutes. The 2 ingredient coconut white chocolate ganache on top adds just more delicious coconut flavour. Coconut lovers, this one's for you!

    Step by step instructions

    Here is how to put together these No Bake Coconut Oatmeal Chocolate Chip Bars. You will need a 9×9 baking pan lined with parchment paper, a mixing bowl, and a spatula.

    Step 1: Melt oil and syrup. Add the coconut oil and maple syrup together and melt it either using a double boiler method or in the microwave, stirring every 30 seconds. Once melted and smooth, remove from heat and allow to cool for 10 minutes.

    Step 2: Mix together dry ingredients. In a large bowl, add the oats, coconut, and mini chocolate chips. Stir together to combine.

    Step 3: Combine. Pour the coconut maple syrup into the bowl with the dry ingredients. Mix with a spatula until evenly coated.

    Step 4: Transfer. Place into the prepared pan and press down firmly and evenly.

    Step 5: Make the ganache. Melt together the white chocolate and coconut oil until smooth. Then pour it on top of the bars and spread evenly.

    Step 6: Cool. Place in the refrigerator for 1 hour to chill, or the freezer for 30 minutes. Once ready, slice and enjoy!

    FAQ

    How do I store these bars?

    When not consuming, keep them in the refrigerator in an airtight container. They stay good like this for up to 1 week.

    Do I have to make the ganache?

    No, but it does add coconut flavour into them. The shredded coconut doesn't really add much coconut flavour.

    Ingredients
     
     

    For the bars

    • 2 cups quick oats
    • 2 1/2 cups shredded coconut
    • 1 1/3 cups extra virgin coconut oil
    • 1/3 cup maple syrup
    • 3/4 cups mini chocolate chips

    For the ganache

    • 1 1/4 cups white chocolate 200g
    • 1/4 cup extra virgin coconut oil

    Instructions
     

    • Line a 9x9 baking pan with parchment paper and set aside.
    • In a pot doing the double boiler method (or using a microwave), melt the coconut oil and maple syrup. Melt until smooth, then remove from the heat
      1 1/3 cups extra virgin coconut oil, 1/3 cup maple syrup
    • In a large bowl, add the shredded coconut, chocolate chips, and oats. Stir to combine.
      2 cups quick oats, 2 1/2 cups shredded coconut, 3/4 cups mini chocolate chips
    • Pour the coconut maple syrup mixture into the bowl and evenly coat the dry ingredients in it.
    • Transfer into the prepared pan and press down firmly and evenly.
    • To make the ganache, melt together the coconut oil and the white chocolate until smooth.
      1 1/4 cups white chocolate, 1/4 cup extra virgin coconut oil
    • Pour on top of the bars and spread as evenly as possible. Then place in the refrigerator or freezer to chill. It takes about 30 minutes-1 hour.
    • Once ready, slice and enjoy.
    • Store these bars in an airtight container in the refrigerator when not consuming.
