    No Bake Coconut Chocolate Oat Bars

    No Bake Coconut Chocolate Oat Bars are so delicious and easy to put together! This recipe combines hearty oats with shredded coconut, sweet chocolate, and Rice Krispies. Only 15 minutes for this sweet homemade snack!

    After making my 5 Ingredient No Bake Chocolate Rice Krispies Oat Bars, I knew I had to make an easy coconut version soon enough!

    I love how much texture these bars have. They have a light crisp from the Rice Krispies, and are chewy from the coconut.

    These bars are such a great make-ahead snack. You can keep them in the fridge and take them out whenever you're craving a sweet treat.

    They come together in ~15 minutes and will satisfy your sweet tooth.

    Ingredients Notes

    Here's a list of the few ingredients we're using in this recipe

    • Brown sugar: I used light brown sugar, but dark brown sugar works as well.
    • Butter - Unsalted or salted works. This will be melted.
    • Chocolate - I used a mix of hazelnut chocolate and dark chocolate. You can use any kind, chips or bars!
    • Coconut - Make sure to use unsweetened shredded coconut. I recommend unsweetened specifically to help balance the sweetness.
    • Milk - Dairy or dairy-free milk works.
    • Oats - Rolled oats are used in this recipe for their hearty texture. These oats are also called old-fashioned or large-flake oats in some stores. You can also use quick oats.
    • Rice Krispies - I used the regular kind, but any flavour or Rice Krispies works.
    • Vanilla - Using a high quality vanilla matters! The pairing of coconut and vanilla is so tasty.

    Step by step instructions

    Here is how to make and bake these No Bake Coconut Chocolate Oat Bars. You will need a 9×9 baking pan lined with parchment paper, a large mixing bowl, and a spatula.

    Step 1 – Prep. Grease the pan. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Gently grease the other two sides and then set aside.

    Step 2 - Melt ingredients. Using a microwave or the double boiler method, melt your butter, brown sugar, vanilla, and milk together until smooth. If using a microwave, melt in 20 second intervals and stir in between each time.

    Step 3 - Add in chocolate. I used a mix of hazelnut chocolate and dark chocolate. The mixture should be hot enough that the chocolate melts right in, but if it isn't then continue to mix it in the microwave or on your stove top.

    Step 4 - Add in oats and Rice Krispies. Add the rolled oats, coconut, and Rice Krispies into the bowl, and mix until evenly coated.

    Step 5 - Transfer. Add the mixture into the prepared pan and press down as evenly as possible.

    Step 6 - Cool. Place into the refrigerator for 1 hour or until firm. You can also place it in the freezer to set faster.

    Step 7 - Slice. Once set, slice however you'd like and enjoy! Keep the bars refrigerated in an airtight container when not eating.

    These bars are so delicious and simple to make! They are a crunchy sweet treat you can enjoy any time of the day. The bars stay good for up to 7 days in an airtight container in the fridge.

    Expert Baking Tips

    Here are a few baking tips from my kitchen to yours!

    • Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
    • Store them in the fridge. They can get soft at room temperature so keep them in a cooler place when not consuming!
    • Use rolled oats. Quick oats are smaller so the texture will be off, but they should still work if you need to use them.

    • 2/3 cups butter

    • 1 tbsp vanilla
    • 3 cups rolled oats
    • 1 3/4 cups unsweetened shredded coconut
    • 1 cup Rice Krispies
