No Bake Coconut Chocolate Oat Bars

No Bake Coconut Chocolate Oat Bars are so delicious and easy to put together! This recipe combines hearty oats with shredded coconut, sweet chocolate, and Rice Krispies. Only 15 minutes for this sweet homemade snack!

  • For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Gently grease the other two sides and then set aside.
  • Using a microwave or the double boiler method, melt your butter, brown sugar, vanilla, and milk together until smooth. If using a microwave, melt in 20 second intervals and stir in between each time.
    2/3 cups butter, 2/3 cups milk, 1/3 cup light brown sugar, 1 tbsp vanilla
  • Once the mixture is melted, add in the chocolate chips. You can also use chocolate bars as long as it's 250g total (I actually used 2 chocolate bars, one hazelnut and one dark). The mixture should be hot enough that the chocolate melts right in, but if it isn't then continue to mix it in the microwave or on your stove top.
    1 1/2 cups chocolate chips
  • Add the rolled oats, coconut, and Rice Krispies into the bowl, and mix until evenly coated.
    3 cups rolled oats, 1 1/2 cups unsweetened shredded coconut, 1 cup Rice Krispies
  • Add the mixture into the prepared pan and press down as evenly as possible.
  • Place into the refrigerator for 1 hour or until firm. You can also place it in the freezer to set faster.
  • Once set, slice however you'd like and enjoy! Keep the bars refrigerated in an airtight container when not eating.
  • These bars are so delicious and simple to make! They are a crunchy sweet treat you can enjoy any time of the day. The bars stay good for up to 7 days in an airtight container in the fridge.
