Butter – I always use unsalted butter. This will be melted.
Brown sugar - I used a dark brown sugar, but light works too.
Chocolate chips – This will be melted. There will also be chocolate chips that will be mixed into the batter. I used semi-sweet. You may also omit them completely.
Cocoa powder - We'll be using unsweetened cocoa powder in this recipe.
M&M's - I used regular-sized M&M's, but mini works too! You can also leave this out for a simple brownie cookie recipe.
Step by step instructions
Here is how to make and bake these M&M brownie cookies. You will need two trays lined with parchment paper, a large mixing bowl, a spatula, a whisk, and a standard ice cream scoop.
Step 1 – Prep. Line a baking tray with parchment paper and melt the butter and chocolate chips. As it cools back down to room temp, measure out the rest of your ingredients.
Step 2 – Mix egg and sugars. Whisk the eggs, brown sugar, and white sugar for 2-3 minutes or until paler in colour and bubbles begin forming.
Step 3 - Add in chocolate mixture. Whisk in the butter chocolate mixture into the egg mixture until smooth and homogenous.
Step 4 - Add in dry ingredients. Mix in flour, cocoa powder, and salt. Fold with a spatula just until a soft dough forms. Don't over-mix!
Step 5 - Mix in add-ins. Add in chocolate chips and M&M's. Fold in a few times until well combined.
Step 6 - Scoop and bake. Scoop 6 even cookie dough balls onto the baking tray. Bake for 10 minutes or until the cookies have a crisp edge and soft middle.
Remove from oven, allow to cool, sprinkle with flakey sea salt (optional but recommended!), and enjoy!
Expert Baking Tips
Here are a few expert baking tips from my kitchen to yours
- Don’t over mix the dough once the dry ingredients are added. If you over mix, the dough will appear more dry and tough.
- Adding a dash of sea salt on top not only helps balance the flavours, but it looks more bakery-style!
- Make sure the flour is spooned and levelled properly. If you stick the measuring cup into the flour, this will compact it. A scale will give you the most accurate measurements.
- Use high quality chocolate. You'll need to use both unsweetened cocoa powder and chocolate in this recipe. Using high quality ingredients leads to high quality results. I love using this cocoa powder and these chocolate chips.
FAQ
Do I have to add in the M&M's?
No! You can just make fudgy brownie cookies with or without the add-ins.
Can I freeze the cookie dough balls?
Yes you can make them ahead of time! Freeze in an airtight container if planning on not baking them the same day. When you’re ready to bake, place them in the oven for 12-15 minutes. Be aware though that baking cookies from frozen dough balls will not allow them to spread as much.
Storing & Freezing
Just like brownies, these brownie cookies will stay fudgy and soft on your counter for days. If you are leaving them on your counter, I highly recommend storing them in an airtight container for ultimate freshness.
To freeze the cookies, bake and allow to get back down to room temperature. Then, place them into a freezer safe Ziplock bag and keep in the freezer for up to 2 months.
When ready to eat, remove from freezer, warm up in your microwave, oven, or air fryer (300F for 5 minutes). Enjoy!

Ingredients
- 1 cup semi-sweet chocolate chips
- 1/3 cup unsalted butter melted
- 3/4 cups dark brown sugar
- 1/4 cup white sugar
- 2 eggs room temperature
- 3/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1/4 cup semi-sweet chocolate chips
- 1/4 cup regular sized M&Ms
Instructions
- Preheat oven to 350°F. Line a cookie sheet with parchment paper.
- In a microwave or using a double boiler method, melt the butter and chocolate together until melted and combined together. Set aside while it cools and you prep the rest of your ingredients.1 cup semi-sweet chocolate chips, 1/3 cup unsalted butter
- Into a large bowl, whisk together the eggs, brown sugar, and white sugar. Whisk until paler in colour and bubbles form.3/4 cups dark brown sugar, 1/4 cup white sugar, 2 eggs
- Add in the chocolate butter mixture and whisk until well combined.
- Add in flour, cocoa powder, and salt. Using a spatula, fold until a soft chocolate dough forms.3/4 cups all-purpose flour, 1/4 cup unsweetened cocoa powder, 1/4 tsp salt
- Add in chocolate chips and M&M's and mix in a few times.1/4 cup semi-sweet chocolate chips, 1/4 cup regular sized M&Ms
- Scoop 6 cookie dough balls at a time. Bake for 10-12 minutes or until the edges are crisp and the inside is still soft. As the cookie cools, it will continue to bake on the tray.
- Remove from the oven and place the tray on your counter to cool. Sprinkle some flakey sea salt (optional but recommended!), and enjoy!
