    Leftover Halloween Candy Cookie Bars

    Take your favourite leftover halloween candy and combine it with oatmeal cookie dough to make these fabulous leftover halloween candy oatmeal bars!

    Halloween comes and goes and then you’re left with all buckets of candy sitting around. What better way to eat them than in this spectacular cookie bar?

    These bars contains a mixture of different candy bars including Kit Kat, Reese’s Cups, Oh Henry, and M&Ms. They are so good!

    This recipe is the perfect way to use up leftover halloween candy.

    Brown sugar – I used dark brown sugar for this recipe, but light brown works as well.

    Egg – Remove 2 hours prior to baking.

    Flour – I used all-purpose flour for this recipe.

    Halloween candy - You can use any leftover chocolate bars you have! I used Reese's, Oh Henry, Kit Kat, and M&M's.

    Oats: Rolled oats work great for this recipe.

    White sugar – Using granulated sugar adds to the crisp edges and sweetness to the cookie bars.

    Vanilla – Using a good quality vanilla is key to adding flavour to the cookie bars!

    Step by step instructions

    Here is how to make and bake these leftover halloween candy cookie bars. You will need a 9x9 baking pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.

    Step 1 – Prep. Melt the butter. Allow it to cool as you prep the rest of your ingredients. Remove the egg from the fridge and allow to come to room temperature. Chop the chocolate bars you want to use and set aside.

    Step 2 – Mix dry ingredients. In a medium bowl, add in flour, oats, cinnamon, cornstarch, baking soda, baking powder, and salt.

    Step 3 – Mix wet ingredients. In a medium bowl, add in butter, brown sugar, and white sugar. Whisk together.

    Step 4 – Mix in egg and vanilla. Add in the eggs and vanilla and whisk well.

    Step 5 – Add in dry ingredients. Mix until a soft cookie dough forms. Don’t overmix!

    Step 6 – Mix in add-ins. Toss in the leftover halloween chocolate bars and mix together.

    Step 7 – Transfer and bake. Place the batter into the prepared pan and spread evenly. Bake for 30-45 minutes or until the top is a light golden brown. Every oven is different, so check after 30 minutes with a toothpick. If a toothpick inserted comes out clean, it is ready).

    Let the cookie bars cool down completely, slice, and enjoy!

    Store in an airtight container for up to 3 days or in the fridge for a week. You can also freeze the cookie bars and thaw in the microwave when wanted. 

    Expert Baking Tips

    Here are a few baking tips from my kitchen to yours

    • Don’t over mix the dough once the dry ingredients are added. If you over mix, the dough will appear more dry and tough.
    • Use any chocolate bars. You can use any type of chocolate bar. I used a mix of Kit Kat, Reese's, Oh Henry, and M&M's.
    • Make sure your ingredients are at room temperature before beginning. 
    • Make sure the flour is spooned and leveled properly. If you stick the measuring cup into the flour, this will compact it. A scale will give you the most accurate measurements.

    Yes!

    What candy bars should I use?

    You can use any chocolate bars you have on hand. I used M&M's, Oh Henry, Kit Kat, and Reese's. That's the beauty of this recipe! Just make sure your total adds up to 1 1/2 cups of chopped chocolate.

    Ingredients
     
     

    • 3/4 cups unsalted butter melted and slightly cooled
    • 1/2 cup brown sugar
    • 1/3 cup white sugar
    • 2 eggs room temperature
    • 1 tbsp vanilla
    • 1 1/2 cups oats
    • 1 1/4 cups flour
    • 1/2 tsp baking soda
    • 1 tsp baking powder
    • 1/4 tsp salt
    • 1/2 tsp cinnamon
    • 1 1/2 cups leftover halloween candy* about 20 mini chocolate bars

    Equipment

    9x9 Baking Pan
    Parchment Paper
    Gram Scale

    Instructions
     

    • Preheat oven to 350°F. Line a cookie sheet with parchment paper. Melt the butter and allow it to cool. Chop the halloween candy and set aside.
      3/4 cups unsalted butter, 1 1/2 cups leftover halloween candy*
    • In a medium bowl, add in flour, oats, cornstarch, cinnamon, baking powder, baking soda, and salt.
      1 1/2 cups oats, 1 1/4 cups flour, 1/2 tsp baking soda, 1 tsp baking powder, 1/4 tsp salt, 1/2 tsp cinnamon
    • In a large bowl, whisk cooled butter, brown sugar, and white sugar. Add in eggs and vanilla and whisk in.
      3/4 cups unsalted butter, 1/2 cup brown sugar, 1/3 cup white sugar, 2 eggs, 1 tbsp vanilla
    • Add in the dry ingredients and mix until a soft cookie dough forms. Don't over-mix!
    • Add in the leftover halloween candy and mix in a few times.
    • Transfer into the prepared pan and spread evenly. Add extra chocolate on top if desired.
    • Bake for 30-45 minutes. Mine took 40 minutes exactly. The cookie bars will be ready when the edges are a golden brown, but the middle will look very soft. Remove from oven, let the cookie bars cool in the pan.
    • When ready, slice and enjoy!
