Leftover Halloween Candy Cookie Bars

Mix your favourite leftover halloween candy into this easy oatmeal cookie dough and make these delicious leftover halloween candy oatmeal bars!

  • Preheat oven to 350°F. Line a cookie sheet with parchment paper. Melt the butter and allow it to cool. Chop the halloween candy and set aside.
    3/4 cups unsalted butter, 1 1/2 cups leftover halloween candy*
  • In a medium bowl, add in flour, oats, cornstarch, cinnamon, baking powder, baking soda, and salt.
    1 1/2 cups oats, 1 1/4 cups flour, 1/2 tsp baking soda, 1 tsp baking powder, 1/4 tsp salt, 1/2 tsp cinnamon
  • In a large bowl, whisk cooled butter, brown sugar, and white sugar. Add in eggs and vanilla and whisk in.
    3/4 cups unsalted butter, 1/2 cup brown sugar, 1/3 cup white sugar, 2 eggs, 1 tbsp vanilla
  • Add in the dry ingredients and mix until a soft cookie dough forms. Don't over-mix!
  • Add in the leftover halloween candy and mix in a few times.
  • Transfer into the prepared pan and spread evenly. Add extra chocolate on top if desired.
  • Bake for 30-45 minutes. Mine took 40 minutes exactly. The cookie bars will be ready when the edges are a golden brown, but the middle will look very soft. Remove from oven, let the cookie bars cool in the pan.
  • When ready, slice and enjoy!

* You can use any leftover chocolate candy bars you have on hand! That’s the beauty of this recipe.
