These soft and fluffy Funfetti Muffins are studded with rainbow sprinkles and taste like a celebration in every bite. They are a fun spin on the classic funfetti cakes and cupcakes!

Funfetti muffins make ordinary days feel a little more magical. Whether it's for a birthday party, or a fun weekend bake, they are always a good idea.
They are perfectly soft and moist on the inside with a vanilla flavour throughout. There is no electric mixer required for this recipe, making it easy and kid-friendly.
I love how fun these muffins are! The colourful sprinkles seriously add so much more cheer.
Ingredients Notes

- Butter: I always use unsalted for baking. This will be softened and used in the streusel.
- Eggs: Use large eggs if you can. They must be at room temperature before beginning.
- Flour: I used all-purpose flour.
- Leavening agents: Both baking soda and baking powder are used.
- Cornstarch: While technically optional, adds a great crumb to these muffins.
- Sprinkles: Any rainbow sprinkles work. I used these ones.
- Vanilla: High quality vanilla matters! It adds a great flavour into the muffins.
- White sugar: Adds a nice sweetness to the muffins.
- Yogurt: You can use any room temperature plain yogurt or kefir.
Step by step instructions
Here is how to bake these Funfetti Muffins. You will need a 12 muffin tin, muffin liners, 2 mixing bowls, a spatula, and a whisk.
Step 1 – Prep. Line your muffin tin with 12 liners and set aside. If you need a recommendation, this is my favourite tin.
Step 2 – Mix together dry ingredients. Add the dry ingredients into a medium-sized bowl, mix, and set aside.
Step 3 - Whisk eggs and sugar. Add the eggs and white sugar into a large bowl. Whisk well together for 2-3 minutes.
Step 4 – Mix wet ingredients. Into the same bowl, add oil, vanilla, and yogurt. Whisk for another 2-3 minutes until combined.
Step 5 - Mix together. Add the dry and wet ingredients together and mix until a soft muffin batter forms. Don't over-mix!
Step 6 - Add sprinkles. Toss the rainbow sprinkles in and mix a few more times to evenly distribute the sprinkles.
Step 7 - Scoop. Divide the muffin batter into the liners evenly. Sprinkle a few extra sprinkles on top.
Step 8 - Bake. The muffins bake for 22-28 minutes or until a toothpick inserted comes out clean.
FAQ
How do I store these muffins?
These muffins are best eaten fresh. They stay good on the counter for up to 3 days in a container, and in the refrigerator for up to 5 days.
Why not make funfetti cupcakes?
Personally I'm not a fan of icing, so muffins are way more appealing than cupcakes for me. Also, muffins in general are a lot easier to bake than cupcakes since there's no icing involved! There's also less dishes to clean, which is a win in my books.
Do I have to add sprinkles?
Nope! This is a great vanilla muffin base.

Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1/4 tsp cinnamon optional
- 1 tbsp cornstarch
- 1/2 cup oil
- 3/4 cups white sugar
- 2 eggs room temperature
- 1 cup yogurt or kefir, room temperature
- 1 tbsp vanilla
- 1/3 cup rainbow sprinkles
Instructions
- Preheat the oven to 375℉/190℃. Line a muffin tin with muffin liners and set aside.
- Add the dry ingredients into a medium-sized bowl and stir to combine. Set aside.2 cups all-purpose flour, 1 tsp baking soda, 1 1/2 tsp baking powder, 1/4 tsp cinnamon, 1 tbsp cornstarch
- Into a large bowl, add the eggs and white sugar. Whisk vigorously for 2-3 minutes until light and airy.3/4 cups white sugar, 2 eggs

- Combine the dry and wet ingredients together with a spatula until a soft muffin batter forms.

- Bake the muffins for 25-30 minutes or until a toothpick inserted comes out clean.
