Preheat the oven to 375℉/190℃. Line a muffin tin with muffin liners and set aside.
Add the dry ingredients into a medium-sized bowl and stir to combine. Set aside.
2 cups all-purpose flour, 1 tsp baking soda, 1 1/2 tsp baking powder, 1/4 tsp cinnamon, 1 tbsp cornstarch
Into a large bowl, add the eggs and white sugar. Whisk vigorously for 2-3 minutes until light and airy.

Add in the yogurt, vanilla, and oil. Continue whisking for another 2-3 minutes until smooth.

Combine the dry and wet ingredients together with a spatula until a soft muffin batter forms.
Add the rainbow sprinkles in and mix a few times to evenly distribute. Don't over-mix!

Scoop evenly between the muffin liners. There should be 12 total.
Bake the muffins for 25-30 minutes or until a toothpick inserted comes out clean.
Allow the muffins to cool, and enjoy!
