    These easy and fudgy Coconut Brownies are such a treat! They are full of shredded coconut and loads of gooey chocolate in every bite.

    The combination of coconut and chocolate is one I can't resist. It is so good.

    These brownies come together in a few easy steps. The brownies are super rich and delicious!

    Step by step instructions

    Here is how to make and bake these fudgy coconut brownies. You will need a 9x9 square pan lined with parchment paper, 2 mixing bowls, a spatula, and a whisk.

    Step 1 - Mix dry ingredients. Add all of the dry ingredients into a bowl and stir to combine. Set aside.

    Step 2 - Whisk eggs and sugars. In a large bowl, add the eggs, brown sugar, and white sugar. Whisk to combine for 2-3 minutes and set aside.

    Step 3 - Add oil and vanilla. Pour in the oil, vanilla, and coconut oil. Continue whisking until smooth.

    Step 4 - Add dry ingredients. Add the dry and wet ingredients together with a spatula until a soft brownie batter forms.

    Step 5 - Mix add-ins. Add the shredded coconut and chocolate chips in. Mix until just combined.

    Step 6 - Transfer and bake. Spread into the prepared pan evenly. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out fudgy.

    FAQ

    How do I store these brownies?

    Brownies are best eaten fresh day of. They stay good in an airtight container on the countertop for 2 days, and in the fridge for up to 5 days!

    Do I have to add coconut oil?

    This recipe doesn't have coconut flavour without the coconut oil. You can make plain brownies by substituting the coconut oil for regular oil (making 1 cup oil total)

    Ingredients
     
     

    • 1 1/4 cups all-purpose flour
    • 1 cup cocoa powder
    • 1/4 tsp baking soda
    • 1/4 tsp baking powder
    • 2/3 cups coconut oil melted
    • 1/3 cup oil or melted butter
    • 3 large eggs room temperature
    • 1 tbsp vanilla
    • 1/2 cup brown sugar
    • 1/2 cup white sugar
    • 1 1/4 cups unsweetened shredded coconut
    • 1/2 cup semi-sweet chocolate chips

    Instructions
     

    • Preheat the oven to 350℉/176℃. Line a 9x9 pan with parchment paper and set aside.
    • Add the dry ingredients into a bowl and mix together. Set aside.

    • Into a large bowl, add the eggs, brown sugar, and white sugar. Whisk for 2-3 minutes until lighter in colour and air bubbles have formed.
      3 large eggs, 1/2 cup brown sugar, 1/2 cup white sugar
    • Add in coconut oil, vanilla, and oil. Continue whisking for another minute until combined.
      2/3 cups coconut oil, 1/3 cup oil, 1 tbsp vanilla
    • Add the dry and wet ingredients together. With a spatula, mix together just until a soft brownie batter forms. Don't over-mix!
    • Mix in the shredded coconut and chocolate chips until just combined. Don't over-mix!
      1 1/4 cups unsweetened shredded coconut, 1/2 cup semi-sweet chocolate chips
    • Transfer into the prepared pan and spread evenly. Sprinkle extra chocolate chips on top if desired.
    • Bake for 30-35 minutes. The brownies are ready when a toothpick inserted comes out fudgy. If it is wet with brownie batter, they are not ready yet.
    • Allow to cool, slice, and enjoy. These brownies are so delicious!
