Instructions

  • Preheat the oven to 350℉/176℃. Line a 9x9 pan with parchment paper and set aside.
  • Add the dry ingredients into a bowl and mix together. Set aside.
1 1/4 cups all-purpose flour, 1 cup cocoa powder, 1/4 tsp baking soda, 1/4 tsp baking powder
  • Into a large bowl, add the eggs, brown sugar, and white sugar. Whisk for 2-3 minutes until lighter in colour and air bubbles have formed.
3 large eggs, 1/2 cup brown sugar, 1/2 cup white sugar
  • Add in coconut oil, vanilla, and oil. Continue whisking for another minute until combined.
2/3 cups coconut oil, 1/3 cup oil, 1 tbsp vanilla
  • Add the dry and wet ingredients together. With a spatula, mix together until a soft brownie batter forms.
  • Mix in the shredded coconut and chocolate chips.
1 1/4 cups unsweetened shredded coconut, 1/2 cup semi-sweet chocolate chips
  • Transfer into the prepared pan and spread evenly. Sprinkle extra chocolate chips on top if desired.
  • Bake for 30-35 minutes. The brownies are ready when a toothpick inserted comes out fudgy. If it is wet with brownie batter, they are not ready yet.
  • Allow to cool, slice, and enjoy. These brownies are so delicious!
