    Ingredients
     
     

    For the strawberries

    • 4 cups fresh strawberries sliced (about 650g)
    • 1/2 tsp vanilla
    • 3 tbsp white sugar
    • 2 tbsp cornstarch
    • 1 tsp lemon zest optional

    For the crisp

    • 1/2 cup unsalted butter softened
    • 3/4 cups rolled oats
    • 1 cup all-purpose flour
    • 1/2 tsp cinnamon
    • 1/4 tsp salt
    • 1/4 tsp baking powder
    • 1/4 cup dark brown sugar
    • 1/4 cup white sugar

    Instructions
     

    • Preheat the oven to 350℉/180℃.

    For the crumble

    • Combine flour, oats, white sugar, brown sugar, butter, cornstarch, cinnamon, baking powder, and salt with your hands or a fork until a soft crumble forms. Set aside.
      1/2 cup unsalted butter, 3/4 cups rolled oats, 1 cup all-purpose flour, 1/2 tsp cinnamon, 1/4 tsp salt, 1/4 tsp baking powder, 1/4 cup dark brown sugar, 1/4 cup white sugar

    For the strawberries

    • In a large bowl, add the sliced strawberries, lemon zest, white sugar, cornstarch, and vanilla. Stir to combine.
      4 cups fresh strawberries, 1/2 tsp vanilla, 3 tbsp white sugar, 2 tbsp cornstarch, 1 tsp lemon zest
    • If using frozen strawberries, add 1 extra tbsp of cornstarch to help absorb extra liquid.
    • Add the strawberries to the bottom of the dish. Then sprinkle the crisp topping on top.
    • Bake for 40-50 minutes, or until the strawberries are sizzling and the crisp top is a light golden brown.
    • Allow to cool for at least 15 minutes before scooping, and enjoy!

    Strawberries: If using frozen, do not thaw! Mix in an extra tbsp of cornstarch as well.
    Oats: Large flake oats or rolled oats work in this recipe. Quick oats will also work, but they are a lot smaller and will bake into the crisp more.
    Brown sugar: Dark or light work!
    Dish size: My oval dish was about 7 inches by 11 inches! A 9x9 pan works as well.
