    Easy Strawberry Cobbler

    It's hard to resist a scoop of this Strawberry Cobbler! It has a golden buttery crust that is perfectly fluffy and has sweet strawberries baked right in. Pair with a scoop of vanilla bean ice cream for the ultimate summer treat.

    This is the first cobbler I've ever baked and it definitely won't be the last!

    The sweet strawberry juices that are sizzling while baking paired with the buttery sugar aromas is next level incredible! If you have fresh strawberries, you have to give this a try!

    There's something so simple about this strawberry cobbler that I just love. Let's get to baking!

    • Butter - I always use unsalted for baking. This will be melted.
    • Cornstarch - Helps create that tender crust.
    • Flour - All-purpose flour is used.
    • Baking powder - Double check that yours isn't expired.
    • Milk - I used 2% whole milk, but any milk (dairy or non-dairy works).
    • Sugar - White granulated sugar adds a bit more sweetness to the cobbler.
    • Strawberries - Fresh, ripe strawberries are used. The more red the sweeter!
    • Vanilla - A high-quality vanilla is important for baking. This adds more flavor into the cake batter.

    Step by step instructions

    Here is how to bake this easy strawberry cobbler. You will need a 9 inch baking dish, 2 bowls, a spatula, and a whisk.

    Step 1: Make strawberry base. Slice the strawberries into smaller pieces and quarters. In a small bowl, add cornstarch and white sugar and stir to combine. Then sprinkle on the strawberries and stir to evenly coat.

    Step 2: Make cobbler base. In a medium-sized bowl, add the flour, white sugar, baking powder, and salt. Stir to combine. Add in the butter, milk, and vanilla. Whisk together until no flour streaks remain.

    Step 3: Layer. Pour 2 tbsp of melted butter into the bottom of the pan. Then add the strawberries. Pour the batter on top as evenly as possible.

    Step 4: Bake. Bake the cobbler for 40-50 minutes or until a toothpick inserted in the middle comes out clean with no batter. Allow to cool and enjoy!

    My favourite way to eat this strawberry cobbler is with a scoop of warm ice cream. It's irresistibly good!

    How do I store leftovers?

    Once cooled down to room temperature, cover the cobbler pan in saran wrap. Store in the refrigerator for up to 3 days.

    What is a cobbler?

    Great question. Cobbler is a baked fruit dessert with a cake batter topping. It gets its name from it's 'cobbled' appearance due to the batter being dolloped on top of the fruits and looking uneven.

    Do I have to add cornstarch?

    Yes, it helps thicken the strawberry juices. You can also use jello powder instead.

    Can I use frozen strawberries?

    Fresh is best for this recipe. If you want to use frozen, you'll have to allow the strawberries to come to room temperature, then drain any excess liquid and pat them dry with paper towel. The extra liquid that frozen berries carry will affect the texture and outcome of the cobbler so this is really important!

    Ingredients
     
     

    For the strawberries layer

    • 500 g fresh strawberries sliced
    • 1 tbsp cornstarch
    • 3 tbsp white sugar
    • 2 tbsp unsalted butter melted

    For the cobbler batter

    • 1 cup all-purpose flour
    • 1/4 cup white sugar
    • 1 3/4 tsp baking powder
    • 1/4 tsp salt
    • 2/3 cups milk room temperature
    • 5 tbsp unsalted butter melted
    • 1 tbsp vanilla

    Instructions
     

    • Preheat the oven to 350℉/176℃. Slice the strawberries into pieces. My deep dish circle baking dish that I used is 9"x1 1/2".
      500 g fresh strawberries
    • In the bowl with the strawberries, add cornstarch and white sugar. Evenly toss and coat the berries. Set aside.
      1 tbsp cornstarch, 3 tbsp white sugar
    • In a large bowl, add flour, white sugar, baking powder, and salt. Stir to combine.
      1 cup all-purpose flour, 1/4 cup white sugar, 1 3/4 tsp baking powder, 1/4 tsp salt
    • Add in milk, butter, and vanilla. Whisk just until no flour streaks appear. Don't over-mix!
      2/3 cups milk, 5 tbsp unsalted butter, 1 tbsp vanilla
    • Time to layer! Pour melted butter on the bottom of the dish. Then add the strawberries and spread on the bottom of the dish. Pour the batter on top as evenly as possible. Sprinkle white sugar on top (optional).
      2 tbsp unsalted butter
    • Bake for 40-50 minutes or until a toothpick inserted in the middle comes out clean.
    • Allow to cool for a bit, then scoop and enjoy! My favourite way to eat this strawberry cobbler is warm with a slice of vanilla ice cream.

    Note: This cobbler is mainly sweetened from the strawberries so the crust does not have a lot of sugar in it. You may increase the sugar amount to 1/2 cup if you want a sweeter crumb.
