    Easy Peach Crumb Bars

    Easy Peach Crumb Bars have a rich buttery sugar base and a fresh sweet peach filling. Only 8 simple pantry ingredients are required. Pair with a scoop of vanilla ice cream for the best summer treat!

    These peach crumb bars are so easy they're dangerous! The base and sprinkle are the same, so you get your bars faster and there's less dishes to clean afterwards.

    The sweet peach filling paired with the buttery sugar base is beyond words. It's rich, decadent, and perfectly crisp. Serve warm with a scoop of vanilla ice cream for the ultimate dessert.

    Step by step instructions

    Here is how to make and bake these peach crumb bars. You will need a 9×9 baking pan, 2 mixing bowls, and a spatula.

    Step 1 – Prep. Line the bottom and two sides with parchment paper. Grease the other two sides and set aside.

    Step 2 - Make the crumb. In a large bowl, add softened butter, flour, white sugar, baking powder, and salt. Mix together with your hands until combined (see photos and video for reference). Set aside 1 1/2 cups of the crumb for the topping.

    Step 3 - Bake the base. Add the remaining crumb into the prepared pan and firmly press it down and up slightly along the sides. Bake for 15 minutes.

    Step 4 - Make the peach filling. Chop the fresh peaches into small pieces. Add vanilla and mix. Then mix in the cornstarch and white sugar.

    Step 5 - Assemble. Once the base has been baked, remove from the oven and add the peach filling on top, leaving about 1 cm of a border from the edges. Then sprinkle the remaining crumb on top. 

    Step 6 - Bake. Place the bars back into the oven and bake for 35-45 minutes. Mine took 43 minutes exactly. You'll know they're ready when the peaches are super soft (Insert a toothpick in them).

    Step 7 - Cool. Allow the bars to cool completely before slicing. If you slice them warm, they will fall apart. Personally, I love eating them warm with a scoop of vanilla bean ice cream!

    FAQ

    How do I store these bars?

    These peach bars are best served within the first two days. Any remainders can go in the fridge for up to 5 days in an airtight container.

    Can I add more sugar?

    Yes. The base of these bars is not sweet on purpose. The peaches add natural sweetness. If you want it to be sweeter, add 1/2 cup of sugar into the base instead of 1/3.

    Ingredients
     
     

    For the base

    • 3 cups all-purpose flour
    • 1/3 cup white sugar
    • 1 cup unsalted butter softened
    • 3/4 tsp baking powder
    • 1/2 tsp salt

    For the peach filling

    • 5 medium-sized fresh ripe peaches sliced (about 700-800g)
    • 1/2 tsp vanilla
    • 2 tbsp white sugar
    • 2 tbsp cornstarch

    Instructions
     

    • Preheat the oven to 350℉/176℃. Line a 9x9 baking pan with parchment paper and gently grease the other sides and set aside.
    • In a bowl, add flour, white sugar, salt, baking powder, and softened butter. Mix together with your hands until a crumbly base forms. Set aside 1 1/2 cups for the topping and stick it in the fridge.

    • Place the remaining crumb in the bottom of the prepared pan and spread evenly. Press down firmly and a little bit up the sides of the pan as well.
    • Bake for 15 minutes.
    • As the base bakes, make the filling. Chop the peaches into slices. Add vanilla into the bowl and mix. Then add the white sugar and cornstarch in and mix together until combined.
      5 medium-sized fresh ripe peaches, 1/2 tsp vanilla, 2 tbsp white sugar, 2 tbsp cornstarch
    • Once the base has baked, remove from the oven and increase the oven temperature to 375℉/190℃. Then add the peaches on top. Then sprinkle the remaining 1 1/2 cups of crumb topping that was reserved earlier on top.
    • Place the bars back into the oven for 35-45 minutes or until the top is a light golden brown. The bars are ready when the peaches are super soft (Insert a toothpick in to check).
    • Allow to slightly cool, slice, and enjoy! My favourite way of eating these bars is warm with a slice of vanilla bean ice cream. It's the best!
