Peach Crumb Bars

Easy Peach Crumb Bars only require 8 ingredients. They have a buttery sugar base and topping and a sweet peach filling. Pair with a scoop of vanilla ice cream for the ultimate summer treat!

  • Preheat the oven to 350℉/176℃. Line a 9x9 baking pan with parchment paper and gently grease the other sides and set aside.
  • In a bowl, add flour, white sugar, salt, baking powder, and softened butter. Mix together with your hands until a crumbly base forms. Set aside 1 1/2 cups for the topping and stick it in the fridge.
    3 cups all-purpose flour, 1/3 cup white sugar, 1 cup unsalted butter, 1/2 tsp salt, 3/4 tsp baking powder
  • Place the remaining crumb in the bottom of the prepared pan and spread evenly. Press down firmly and a little bit up the sides of the pan as well.
  • Bake for 15 minutes.
  • As the base bakes, make the filling. Chop the peaches into slices. Add vanilla into the bowl and mix. Then add the white sugar and cornstarch in and mix together until combined.
    5 medium-sized fresh ripe peaches, 1/2 tsp vanilla, 2 tbsp white sugar, 2 tbsp cornstarch
  • Once the base has baked, remove from the oven and increase the oven temperature to 375℉/190℃. Then add the peaches on top. Then sprinkle the remaining 1 1/2 cups of crumb topping that was reserved earlier on top.
  • Place the bars back into the oven for 35-45 minutes or until the top is a light golden brown. The bars are ready when the peaches are super soft (Insert a toothpick in to check).
  • Allow to slightly cool, slice, and enjoy! My favourite way of eating these bars is warm with a slice of vanilla bean ice cream. It's the best!

Notes

White sugar* - The base of these bars is not sweet as the peaches add natural sweetness. If you want it to be sweeter, add 1/2 cup of sugar into the base instead of 1/3 cup.
