The base is a simple oat crumble that comes together in minutes with melted butter, creating a buttery, crumbly mixture that doubles as both the crust and sprinkle. Making this recipe less effort and less clean up!

Whether you’re using fresh blueberries or convenient frozen ones, the result is just as delicious. Since you can use frozen blueberries, this recipe can be enjoyed year-round!

Step by Step Instructions
Here is how to make and bake these Blueberry Crumble Bars. You will need an 8×8 square pan lined with parchment paper, two mixing bowls, a spatula, and a whisk.
Step 1 - Mix dry ingredients. In a large bowl, mix together all-purpose flour, brown sugar, white sugar, and quick oats.

Step 2 - Add in melted butter (slightly cooled) and egg yolk. Using your hands or a wooden spoon, mix until it forms a crumble texture.

Step 3 - Scoop a cup of the mixture and put it to the side. This will be used as the topping.
Step 4 - Pour the remaining mixture into the prepared square pan and press down firmly using the bottom of a glass or your hand.
Step 5 - In a small bowl, combine frozen blueberries, white sugar, and lemon juice.

Step 6 - Scoop the filling onto the base of the bars. Evenly distribute.

Step 7 - Add the remaining cup of crumble mixture you put aside earlier on top.

Step 8 - Bake for 30-35 minutes or until the top is a nice golden brown. Allow to cool completely before slicing.

Can I use fresh blueberries?
Yes! Fresh or frozen both work!
Why did my bars turn out soggy?
Make sure you drain the frozen blueberries of any excess water before adding it into your bowl. Take them out in the beginning as you measure and prep all of your ingredients. See video for reference.
Can I freeze Blueberry Crumble Bars?
Yes! But the top will not be crispy when you reheat it.

- Cooling - The bars can't be sliced warm or else they'll fall apart! You must completely cool them. You can speed this up by placing them in the fridge!
- Doubling the recipe - Baking for a crowd? This recipe may be doubled in a 9x13 pan. Simply click the 2x button in the recipe card to automatically double the recipe.
- Fruits - Not a fan of blueberries? No problem! Substitute for any other berries like strawberries, raspberries, blackberries, etc.

Base & Crumble Topping
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 1 cup all-purpose flour
- 3/4 cup quick oats
- 1 egg yolk* room temperature
- 1/2 cup unsalted butter melted
Blueberry Filling
- 1/2 cup white sugar
- 3 tbsp lemon juice
- 2 cups frozen blueberries* or fresh
Instructions
- Preheat the oven to 350°F/176℃ and prepare an 8x8 square pan with parchment paper. Set aside.
- In a bowl, whisk together brown sugar, white sugar, flour, and quick oats.1/2 cup white sugar, 1/4 cup brown sugar, 1 cup all-purpose flour, 3/4 cup quick oats
- Add in egg yolk and melted butter and continue on mixing using a spatula or your hands. It will turn into a crumbly form.1 egg yolk*, 1/2 cup unsalted butter
- Set aside 1 cup of the sprinkle. This will be for the topping.
- Transfer the rest of the dough into the prepared pan and press down firmly with your hands or the bottom of a glass. Ensure the entire pan is covered, and slightly up the sides as well. Set aside.
- In a separate bowl, mix together the blueberries, white sugar, and lemon juice with a spoon.1/2 cup white sugar, 3 tbsp lemon juice, 2 cups frozen blueberries*
- Scoop the filling onto the base of the bars. Evenly distribute.
- Add the remaining crumble mixture on top over the berry layer.
- Bake in preheated oven for 30-35 minutes or until the top begins to become a golden brown colour.
- Allow to cool completely before slicing. You may speed up this process by placing it into the fridge. If you slice while the bars are warm, they will fall apart.
- Store the bars in an airtight container on the counter for up to 3 days or in the refrigerator for up to 1 week
