These chewy Blueberry Blondies are easy to make and delicious in taste! They have hints of lemon flavour and juicy blueberries exploding in every bite. It's topped with a sweet buttery streusel that really elevates this recipe!

This recipe is awesome because you don't need an electric mixer for it! Everything gets mixed together in one bowl with a whisk and a spatula.
The combination of fresh lemon zest and sweet blueberries is simply divine. With the buttery streusel on top, it's one that I know I'll be making over and over again.

Why this recipe works

Ingredients Notes
Blueberries – Make sure to use fresh, and not frozen. If you have to use frozen, don't thaw them.
Brown sugar - Light brown sugar was used in this recipe, but dark or golden yellow works as well!
Butter - I like using unsalted butter in all of my recipes. This will be melted and cooled.
Flour – All-purpose flour is used in this recipe.
Lemon – Lemon zest of half a large lemon is used in this recipe.
Eggs – Make sure they’re at room temperature before beginning.
Step by step instructions
Here is how to make and bake this Blueberry Blondies. You will need an 8×8 square pan lined with parchment paper, three mixing bowls, and a spatula.
Step 1 – Prep. Grease the pan. For easy removal of the blondies, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside.
Step 2 – Melt butter. Melt the butter and set aside as it cools and you prep the rest of the ingredients.
Step 3 – Make streusel. In a medium-sized bowl, add cold butter, sugar, and flour. Mix until a crumb forms. This will be your streusel. Set aside.
Step 4 - Whisk dry ingredients. In a medium-sized mixing bowl, add in flour, baking powder, baking soda, and salt. Set aside.
Step 5 - Mix wet ingredients. In a large bowl, add in melted and cooled butter and brown sugar. Whisk until well combined. Then add in egg, lemon zest, and vanilla and continue whisking.
Step 6 - Combine. Add the dry ingredients into the wet and using a spatula, gently fold until a soft batter forms.
Step 7 – Add blueberries. Gently toss the blueberries in 1-2 tsps of flour before adding them into the mixing bowl. This will help absorb any liquid they may have from washing. Then add into the bowl and mix in a few times.
*If you are using frozen blueberries, add them directly into the bowl.
Step 8 – Transfer and bake. Add the blondies into the prepared pan and spread evenly. Top with streusel. Bake the blondies at 350F for 25-30 minutes or until a toothpick inserted comes out clean. You’ll know it’s ready when the edges are a golden brown and the middle is slightly puffy.

Expert Baking Tips
Here are a few expert baking tips from my kitchen to yours
- Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
- Avoid over-mixing the batter. Mix until ingredients are just combined.
- Allow the parchment paper to hang over the sides of your pan for easier removal. When ready to remove. run a butterknife around the edges of your blondies and then pop them out.
- Using fresh blueberries is best, but if you want to use frozen you can as well. Do not thaw them before adding them into the batter.
- Allow the blondies to completely cool before slicing for clean slices.

Can I use frozen blueberries?

For the streusel
- 7 tbsp butter cold
- 1 cup all-purpose flour
- 1/3 cup white sugar
For the blueberry blondies
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter melted and cooled
- 3/4 cups brown sugar
- 1 large egg room temperature
- 1 tbsp vanilla extract
- 1 tbsp lemon zest about 1/2 a large lemon
- 3/4 cup blueberries fresh or frozen
Instructions
- Preheat oven to 350℉. Melt the butter and prepare to measure the rest of your ingredients as it cools.1/2 cup unsalted butter
- Grease the pan. For easy removal of the cake, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside
- In a small bowl, make the streusel. Combine flour, white sugar, and cold cut up butter. Using your hands, mix it together until combined into a crumbly, streusel mixture. - In another small bowl, add in flour, salt, baking soda, and baking powder. Using a spatula, mix around until mixed together.1 cup all purpose flour, 1/2 tsp baking powder, 1/4 tsp baking soda, 1/2 teaspoon salt
- In a large bowl, whisk together butter and brown sugar until well combined. Then add in lemon zest, egg, and vanilla and keep on whisking.3/4 cups brown sugar, 1 large egg, 1 tbsp vanilla extract, 1 tbsp lemon zest
- Add the dry ingredients into the wet and using a spatula, gently fold until a soft blondie batter forms. Don't overmix!
- In the bowl with the blueberries, add 1-2 tsps of flour and gently toss around until evenly coated. The light coating of flour will absorb any extra liquid it may have before adding it into the mixing bowl.3/4 cup blueberries
- Spread evenly into the pan. Top off with more blueberries and streusel.
- Bake for 25-29 minutes or until the edges are a golden brown colour. Allow to cool, slice, and enjoy!
