    Chocolate Banana Oatmeal Brownies

    These easy Chocolate Banana Oatmeal Brownies are soft-baked and have incredible flavours throughout. Each bite is full of sweet bananas, chewy oats, and cocoa. They are perfect for breakfast, snack time, and an after dinner sweet treat.

    I can't believe how easy these oatmeal brownies are to bake. They make for the perfect meal prep treat!

    The bananas keep them extra fudgy and soft on your counter for days. If you have ripening bananas on your counter and don't want to make a boring banana bread, try these!

    Ingredients Notes

    Butter – Unsalted butter works best. This will be melted.

    Brown sugar – I used dark brown sugar.

    Bananas – The riper the bananas, the better. The more brown spots they have on them, the sweeter the bars will be!

    Chocolate chips - I used semi-sweet chocolate chips. You can use a chopped up chocolate bar or omit these completely.

    Eggs - Must be at room temperature before beginning.

    Unsweetened cocoa powder – Sift before using! Also make sure to use a high-quality cocoa powder that is unsweetened and not sweetened. I love using this one.

    Step by step instructions

    Here is how to make and bake these banana oat brownies. You will need a 9x9 square pan lined with parchment paper, 2 mixing bowls, a spatula, and a whisk.

    Step 1 – Prep. Grease the pan. Then place parchment paper on the bottom and 2 sides of the pan. Set aside.

    Step 2 - Mash the bananas. Using a fork, mash the bananas. Set aside.

    Step 3 - Mix dry ingredients. In a medium-sized bowl, add the flour, sifted cocoa powder, rolled oats, baking soda, and salt. Stir to combine and set aside.

    Step 4 - Add wet ingredients. In a large bowl, whisk the melted butter, eggs, mashed bananas, vanilla, milk, and dark brown sugar. It may be slightly lumpy from the bananas and this is normal.

    Step 6 - Add dry ingredients. Combine the wet and dry ingredients together until a soft batter forms. Once there are no dry streaks, stop mixing.

    Step 7 - Add chocolate chips. Toss the chocolate in and mix a few times to evenly distribute. Don't over-mix.

    Step 8 - Transfer. Spread evenly in the prepared pan and sprinkle extra chocolate chips on top (optional, but recommended).

    Step 9 - Bake. These brownies bake for 35-45 minutes. They are ready when a toothpick inserted comes out clean. Allow to cool, slice, and dig in!

    FAQ

    How do I store these brownies?

    These are super fudgy and soft, so they stay good on the counter for up to 3 days at room temperature. If wanting to refrigerate, place in an airtight container for up to 1 week.

    Ingredients
     
     

    • 1/2 cup unsalted butter melted and cooled
    • 3/4 cups dark brown sugar
    • 1 1/2 cups ripe bananas approx 3 medium-sized, mashed
    • 2 large eggs room temperature
    • 3/4 cups milk room temperature
    • 1 tbsp vanilla
    • 1 1/4 cups all-purpose flour
    • 1/2 cup unsweetened cocoa powder sifted
    • 1 1/2 cups rolled oats
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 2/3 cups semi-sweet chocolate chips plus more for topping

    Instructions
     

    • Preheat the oven to 350℉/176℃. Line a 9x9 pan with parchment paper and set aside. Mash the bananas and set aside.

    • In a medium-sized bowl, add the dry ingredients. Stir together and set aside.
      1 1/4 cups all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 1/2 cups rolled oats, 1 tsp baking soda, 1/4 tsp salt
    • In a large bowl, add the eggs, melted and slightly cooled butter, dark brown sugar, vanilla, milk, and mashed bananas. Continue whisking until combined. The mixture may be lumpy from the bananas and that is normal.
      1/2 cup unsalted butter, 3/4 cups dark brown sugar, 2 large eggs, 3/4 cups milk, 1 tbsp vanilla, 1 1/2 cups ripe bananas
    • Add the dry ingredients into the wet. With a spatula, gently fold to create a soft chocolate batter. Don't over-mix!
    • Toss the chocolate chips in and mix a few times.
      2/3 cups semi-sweet chocolate chips
    • Transfer into the prepared pan and spread evenly. Sprinkle extra chocolate chips on top (optional).
    • Bake for 35-45 minutes or until a toothpick comes out dry. Mine took 38 minutes total. Allow it to cool, slice, and enjoy!
