    Why this recipe works

Easy to make - Only 5 ingredients!

Granola - If you love granola bars, you will love these!

Delicious - Chewy and JAM-packed with flavours!

    Ingredients Notes

Here's a list of the five ingredients we're using in this recipe

    • Chocolate chips - I used mini chocolate chips as an add-in and recommend you do the same. Mine melted into the granola, but I sprinkled some on top too!
    • Coconut - Unsweetened shredded coconut is used in this recipe. You can also use sweetened shredded coconut, but the bars will be sweeter (obviously haha).
    • Maple syrup - Helps bind everything together. You can also use honey, agave syrup, or table syrup.
    • Oats - Rolled oats are used in this recipe for their hearty texture. These oats are also called old-fashioned or large-flake oats in some stores. Don't use quick oats, they are thin and the consistency will not turn out the same.
    • Peanut butter - I used a creamy peanut butter. You can also use a crunchy peanut butter or any other nut butter you like. Just make sure not to use natural peanut butter.

    Step by step instructions

Here is how to make these 5 Ingredient No Bake Granola Cups. You will need a 12 muffin tin, muffin liners (if using), 2 mixing bowls, and a spatula.

Step 1 - Prep. Line the muffin tin with your muffin liners or grease each tin with some oil (this is what I did, both methods work just fine). Set aside.

Step 2 - Melt peanut butter and syrup. In a microwave safe bowl or using the double boiler method, add the creamy peanut butter and maple syrup. Heat in 20 second intervals in the microwave or 5-10 minutes using the double boiler method on the stove until the peanut butter is melted and combined. Remove from heat to cool for 5 minutes.

Step 3 - Mix add-ins. In a large bowl, combine oats, chocolate chips, and coconut. Stir to combine.

Step 4 - Add together. Add the dry into the wet and stir until evenly coated. If your mixture was to hot like mine, your chocolate chips may melt. That is ok!

Step 5 - Scoop. Divide the granola evenly amongst the 12 cups. Press each one down firmly. Sprinkle extra add-ins on top if desired.

Step 6 - Chill. Chill the cups in the refrigerator for 1 hour, or freezer for 30 minutes.

When ready to eat, pop them out using a butterknife gently around the edges of each one and enjoy!

These cups are SO delicious. Store them in the fridge for a firmer granola cup, or at room temperature for a softer, chewier cup.

    Storing & Freezing

Make ahead - These cups are a great snack to make ahead of time! Simple make them and store in an airtight ziplock bag in your fridge for up to a week, or in the freezer for up to a month. Allow to thaw from freezer before consuming.

Room temperature - These cups stay good and hold their shape at room temperature for 2-3 days. They are softer and chewier at room temperature.

    FAQ

Why did my chocolate chips melt?

This means your peanut butter & syrup mixture was to hot. This happened to me too! Don't worry, your granola cups will still taste delicious.

Can I add in other add-ins?

Yes, feel free to add in whatever add-ins you'd like (nuts, raisins, dried fruit, seeds, different chocolates, etc).

Can I make these in a granola bar form?

Absolutely! These make great granola bars. Use a prepared 8x8 pan, and refrigerate for the same amount of time.
