Instructions

  • Line the muffin tin with your muffin liners or grease each tin with some oil (this is what I did, both methods work just fine). Set aside.
  • In a microwave safe bowl or using the double boiler method, add the peanut butter and maple syrup. Heat in 20 second intervals in the microwave stirring in between each time, or 5-10 minutes using the double boiler method on the stove until the peanut butter is melted and combined. Remove from heat to cool for 5 minutes.
1 1/4 cups peanut butter, 1/2 cup maple syrup
  • In a large bowl, combine oats, chocolate chips, and coconut. Stir to combine.
3 cups rolled oats, 1/2 cup shredded coconut, 1/3 cup mini chocolate chips
  • Add the dry into the wet and stir until evenly coated. If your mixture was to hot like mine, your chocolate chips may melt. That is ok!
  • Divide the granola evenly amongst the 12 cups. Press each one down firmly. Sprinkle extra add-ins on top if desired.
  • Chill the cups in the refrigerator for 1 hour, or freezer for 30 minutes.
  • When ready to eat, pop them out using a butterknife gently around the edges of each one and enjoy!
  • These cups are SO delicious. Store them in the fridge for a firmer granola cup, or at room temperature for a softer, chewier cup.
