As a coconut lover, I'm so excited for this recipe. They have both coconut milk and shredded coconut in them, so the coconut flavours are incredible!
These bars aren't to sweet, so they are perfect for any time of the day.
Ingredient Notes
Here are the four ingredients needed in these coconut oatmeal bars
- Coconut Milk: I used canned coconut milk, which was a lot thicker than regular milk. See photo below for reference.
- Sweetened condensed milk: A full 300ml can is used.
- Shredded coconut: Unsweetened or sweetened works.
- Oats: I used rolled oats, large flake oats also work.
Step by step instructions
Here is how to make these 4 ingredient coconut oatmeal bars. You will need a 9×9 baking pan lined with parchment paper, a mixing bowl, a spatula, and a whisk.
Step 1: Prep. Line the pan with parchment paper and set aside.
Step 2: Melt milk and condensed milk. Using a small pot over low heat, melt the coconut milk and sweetened condensed milk together until smooth. You can also melt it in the microwave.
Step 3: Mix dry ingredients. Remove from the stove and pour into a bowl. Add the oats and shredded coconut and mix in.
Step 4: Transfer and bake. Add the mixture into the pan and press down firmly and evenly. Bake for 25-30 minutes or until the edges are a light golden brown.
Allow the bars to cool, slice, and enjoy.

Ingredients
- 2 cups unsweetened shredded coconut
- 1 can sweetened condensed milk 300ml, 1 1/4 cups total
- 3 cups rolled oats
- 1 cup canned coconut milk
Instructions
- Preheat the oven to 375℉/190℃. Line a 9x9 baking pan with parchment paper and set aside.
- In a pot over low heat, melt the coconut milk and sweetened condensed milk together. Mix until smooth and homogenous.1 cup canned coconut milk, 1 can sweetened condensed milk
- Transfer into a bowl and add the oats and shredded coconuts. Mix together until all combined.2 cups unsweetened shredded coconut, 3 cups rolled oats
- Add into the prepared pan and spread evenly and press down firmly.

- Allow the bars to cool completely, then slice and enjoy!
