I love a good oatmeal cookie, but you know what I love even more? A good M&M oatmeal cookie with a brown butter base! I don't know what it is about the combination of M&M's and oatmeal, but is it ever incredible.
This cookie dough is such a treat. It comes together in one bowl, with no electric mixer required. The cookies are ready from start-to-finish in under 30 minutes!
These cookies are soft in the middle and perfectly chewy all around. The M&M's add a little 'crunch' to them as well from their shell.
Whether it's for a crowd, a classroom, a gift exchange, or for just for a special someone, these cookies are always a good idea!

Step by step instructions
Here is how to make and bake these Valentine's Day M&M Cookies. You will need two trays lined with parchment paper, a large mixing bowl, a spatula, a whisk, and a 2 tbsp ice cream scoop.
Step 1 - Mix dry ingredients. In a bowl, mix the oats, flour, baking soda, baking powder, cornstarch, and salt. Stir to combine and set aside.
Step 2 - Whisk in the butter and sugars. Whisk the melted and cooled brown butter (See recipe card for details on how to brown butter), brown sugar, and white sugar until well combined.
Step 3 - Mix in the wet ingredients. Whisk in the egg, egg yolk, and vanilla extract until just combined.


Step 4 - Add dry ingredients. Continue to mix just until almost a soft cookie dough forms.
Step 5 - Mix in add-ins. Add the M&M's and chocolate chips and mix a few times to incorporate them and no more dry flour streaks appear.


Step 6 - Scoop and bake. Add 6 cookies at a time per baking tray, spacing them evenly apart from one another. Add extra M&M's and chocolate on top.
Bake the cookies for 13-16 minutes or until the edges are baked and the middles are slightly puffy. Allow to cool, and enjoy!

Expert Baking Tips
Here are a few expert baking tips from my kitchen to yours
- Use a gram scale for the most accurate measurements. To convert this recipe, click the ‘metric’ button next to the ingredients title on the recipe card.
- Make sure the butter is not hot when mixing. If it is hot, the dough will be to soft and the cookies will spread to much in the oven.
- Use rolled oats. Quick oats are to small!
- Do not over-mix. When adding in the add-ins, you want the flour mixture to be 3/4's of the way mixed in. Then add in the add-ins, and mix until no flour streaks appear. This will ensure you haven't over-mixed your dough!

These cookies are best enjoyed within the first 3 days. They stay good in an airtight container for up to 1 week!
Can I use other M&M's?
Yes!
Why did my cookies not turn out chewy?
You may of over-baked them or over-measured the dry ingredients. Make sure to under-bake the cookies (slightly puffy middles and baked edges) and to measure with a gram scale always.

Ingredients
- 1/2 cup + 2 tbsp unsalted butter melted and browned
- 1/3 cup dark brown sugar
- 1/4 cup white sugar
- 1 large egg room temperature
- 1 large egg yolk room temperature
- 2 tsps vanilla
- 1 1/4 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup Valentine's Day M&Ms
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350℉/176℃ and line two baking trays with parchment paper and set aside.
- Brown the butter: In a pot over medium-high heat, add the butter and stir until melted. It will foam, sizzle, and crackle (3-5 minutes), continue stirring the entire time to prevent burning. The butter will turn an amber brown color, and the aroma of nutty browned butter along with specks at the bottom of the pan will arrive when it is ready. Transfer into a heat-safe glass to cool for 15 minutes while you prep the rest of the ingredients.1/2 cup + 2 tbsp unsalted butter
- In a bowl, add the oats, flour, baking soda, baking powder, cornstarch, and salt. Stir to combine and set aside.1 1/4 cups all-purpose flour, 1 1/2 cups rolled oats, 1 tsp cornstarch, 1/2 tsp baking soda, 3/4 tsp baking powder, 1/4 tsp salt

- Add in egg, yolk, and vanilla. Continue whisking for another minute or so until well combined.1 large egg, 1 large egg yolk, 2 tsps vanilla
- Add in the dry ingredients. With a spatula, gently fold just until a soft cookie dough forms. Do not over-mix!
- Add in the M&M's and chocolate chips. Continue mixing until no flour streaks appear.1/2 cup Valentine's Day M&Ms, 1/2 cup semi-sweet chocolate chips
- Scoop 6 cookies per tray, spacing them evenly apart from one another. Add extra M&M's and chocolate chips on top if desired.
- Bake for 13-16 minutes or until the cookies are baked on the edges, and still slightly puffy in the middles. Allow to cool, and enjoy!
