    Triple Berry Streusel Muffins

    What a treat these Triple Berry Streusel Muffins are! They are exploding in berry flavours. The buttery sugar streusel sprinkled on top crisps up while baking, making the perfect muffin top!

    After making my Triple Berry Muffins, I knew I had to make a streusel version soon enough!

    Muffins are the perfect grab-and-go breakfast or sweet treat. They are tall, fluffy, and full of deliciousness!

    Step by step instructions

    Here is how to make and bake these Triple Berry Streusel Muffins. You will need a 12 muffin tin, muffin liners, 3 mixing bowls, a spatula, and a whisk.

    Step 1 - Prep. Line the muffin tin with 12 liners and set aside.

    Step 2 - Make the streusel. In a bowl, add the softened butter, flour, and white sugar. With your hands or a fork, mix together until a crumbly mixture forms. Place in the fridge to chill as the muffin batter is made.

    Step 3 - Mix dry ingredients. In a small bowl, whisk together the flour, baking soda, baking powder, cinnamon, cornstarch, and salt. Mix to combine and set aside.

    Step 4 - Whisk wet ingredients. In a large bowl, whisk together the wet ingredients until smooth and combined.

    Step 5 - Combine together. Add the dry and wet ingredients together. With a spatula, stir to form a soft muffin batter.

    Step 6 - Add berries. Into the bowl with the berries, add 1 tsp of flour and coat the berries evenly.

    Step 7 - Mix together. Combine the berries with the muffin batter just until the flour streaks disappear. Don't over-mix.

    Step 8 - Scoop. Divide the batter evenly into the muffin liners. Scoop a handful of streusel on top of each muffin.

    Step 9 - Bake. The muffins bake for 20-25 minutes or until a toothpick inserted comes out clean.

    FAQ

    How do I store these muffins?

    Triple Berry Streusel Muffins are best eaten fresh. They stay good on the counter for 3 days, and in an airtight container in the fridge for up to 1 week.

    Can I add frozen berries?

    Yes, but do not thaw them. Toss them in 1 tsp of flour and immediately bake the muffins. Don't let the berries thaw or else they will release liquid, affecting the muffin batter.

    Ingredients
     
     

    For the muffins

    • 2 1/2 cups all-purpose flour plus 1 tsp for dusting
    • 2 tsp baking powder
    • 1 tsp baking soda
    • 1 1/2 tsp cornstarch
    • 1/4 tsp cinnamon
    • 1/4 cup unsalted butter melted and slightly cooled
    • 1/3 cup oil
    • 2 large eggs room temperature
    • 1 cup yogurt room temperature
    • 1/2 tsp lemon zest optional
    • 3/4 cups white sugar
    • 2 tsp vanilla
    • 2 cups mixed fruits* I used raspberries, blackberries, and blueberries.

    For the streusel

    • 3/4 cups all-purpose flour
    • 5 tbsp unsalted butter softened
    • 1/3 cup white sugar

    Instructions
     

    • Preheat the oven to 375℉/190℃. Line the muffin tin with liners and set aside.

    Make the streusel

    • In a bowl add the butter, flour, and sugar. Mix together with your hands or a fork until a crumbly streusel forms. Set in the fridge to chill.
      3/4 cups all-purpose flour, 5 tbsp unsalted butter, 1/3 cup white sugar

    For the muffins

    • Into a bowl add the flour, baking soda, baking powder, cornstarch, and cinnamon. Stir to combine and set aside.
      2 1/2 cups all-purpose flour, 2 tsp baking powder, 1 tsp baking soda, 1 1/2 tsp cornstarch, 1/4 tsp cinnamon
    • Into a large bowl add the white sugar, vanilla, yogurt, melted butter, oil, eggs, and lemon zest. Whisk together.
      1/4 cup unsalted butter, 1/3 cup oil, 2 large eggs, 1 cup yogurt, 1/2 tsp lemon zest, 3/4 cups white sugar, 2 tsp vanilla
    • Combine the dry and wet ingredients with a spatula until a soft muffin batter forms. Do not over-mix!
    • Into the bowl with the mixed berries, add 1 tsp of flour and evenly coat the berries in it. This will prevent them from sinking as they bake.
      2 cups mixed fruits*
    • Add them into the muffin batter and stir to combine. Don't over-mix!
    • Scoop the batter into the liners, filling them to the top. Sprinkle a handful of streusel on top of each one.
    • Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
    • These muffins are such a treat! Enjoy!

    Notes

    Mixed berries* - Fresh berries are ideal. If you want to use frozen, do not thaw them. Toss them in 1 tsp of flour before adding them into the batter, and bake immediately. Also, if your fresh berries are large, slice them into smaller pieces so they bake better.
    Yogurt* - You can use room temperature yogurt, kefir, sour cream, or buttermilk. To make buttermilk, mix 1 cup of room temperature milk with 1 tbsp of lemon juice or vinegar. Allow to sit on the counter for 10 minutes to activate.
