    Simple Peach Cake

    This is the easiest Peach Cake! It is a soft and fluffy cake with sweet peaches. It is sprinkled with a buttery sugar streusel before baking. I am obsessed!

    As peach season is flying by, I couldn't help but share this delicious cake!

    The cake is really fluffy and has fresh peaches in every bite. It's packed with so much good flavour! Enjoy it with a cup of coffee or as an after-dinner treat.

    Step by step instructions

    Here is how to bake this simple peach cake. You will need a lined 9x9 baking pan, 3 bowls, a spatula, and a whisk.

    Step 1 – Make the streusel. Add flour, white sugar, brown sugar, cinnamon, and softened butter into a bowl. Mix this with your hands or a fork until combined. Set aside while you make the cake batter.

    Step 2 - Mix dry ingredients. In a bowl, add the flour, baking soda, baking powder, cornstarch, cinnamon, and salt. Stir to combine and set aside.

    Step 3 - Whisk eggs and sugar. In a large bowl, add the eggs and sugar. Whisk for 2-3 minutes vigorously until well combined.

    Step 4 - Add in oil. Whisk in the oil for another minute or 2 until smooth.

    Step 5 - Mix sour cream and vanilla. Add the sour cream and vanilla. Continue to whisk for another minute until well combined.

    Step 6 - Combine together. Mix the dry and wet ingredients together just until a soft cake batter forms. Do not over-mix!

    Step 7 - Transfer. Place the cake batter in the prepared pan and spread evenly. Then layer with peaches, and streusel.

    Step 8 - Bake. Bake the cake for 50-65 minutes or until a toothpick inserted comes out clean. Allow to cool, slice, and enjoy!

    FAQ

    How do I store this cake?

    This cake is best served fresh. You can store it in an airtight container for up to 3 days on the counter at room temperature, and 1 week in the fridge!

    Do I have to add the streusel?

    I highly recommend it! The streusel adds a lot of flavour!

    Can I use canned or frozen peaches?

    While I highly recommend using fresh peaches, you may use canned or frozen ones as well. If using canned, drain them and pat dry as good as possible before adding on top. The peach cake flavour may slightly change due to the syrup in them. If using frozen, thaw, drain, and pat dry before using.

    Ingredients
     
     

    For the cake

    • 2 cups all-purpose flour
    • 3/4 tsp baking soda
    • 3/4 tsp baking powder
    • 1/4 tsp salt
    • 1 tbsp cornstarch
    • 1/4 tsp cinnamon
    • 3/4 cups white sugar*
    • 2 large eggs room temperature
    • 1 tbsp vanilla
    • 2/3 cups oil
    • 2/3 cups sour cream room temperature
    • 2 1/2 cups ripe peaches about 3 medium, chopped in small pieces

    For the streusel

    • 1 cup all-purpose flour
    • 1/2 cup white sugar
    • 1 tbsp light brown sugar
    • 6 tbsp unsalted butter softened
    • 1/8 tsp cinnamon optional

    Instructions
     

    • Preheat the oven to 350℉/180℃. Line a 9x9 pan with parchment paper and set aside. Slice the peaches into small pieces and set aside.
      2 1/2 cups ripe peaches

    For the streusel

    • In a bowl, add the butter, white sugar, brown sugar, flour, and cinnamon. Mix together with your hands or a fork until combined. Then set aside in the fridge while the batter is made.
      1 cup all-purpose flour, 1/2 cup white sugar, 1 tbsp light brown sugar, 6 tbsp unsalted butter, 1/8 tsp cinnamon

    For the cake

    • In a bowl, add the flour, baking soda, baking powder, cornstarch, cinnamon, and salt. Stir to combine and set aside.

    • In a large bowl, add the white sugar and eggs. Whisk vigarously for 2-3 minutes until well combined.

    • Add in the oil and continue whisking until smooth.
      2/3 cups oil
    • Add in the sour cream and vanilla. Continue to whisk together.
      1 tbsp vanilla, 2/3 cups sour cream
    • Add the dry ingredients in. With a spatula, gently stir just until a soft cake batter forms. Do not over-mix!
    • Transfer into the prepared pan and spread evenly. Add the sliced peaches on top, and the sprinkle the streusel.
    • Bake for 50-65 minutes or until a toothpick inserted in the middle comes out clean. If it is still wet with batter, it is not ready. When baked, allow to cool before slicing. Enjoy!

    Notes

    White sugar* - This cake is not sweet. It gets most of it's sweetness from the peaches. If you want your cake to be more sweet, add another 1/4 cup (50g) of white sugar.
