    I love plum season. I feel like plums are definitely underrated in the baking world. This cake transforms seasonal plums into a delicious treat perfect for any time of the day!

    The cake is a simple and soft lemon-vanilla cake. It gets topped with fresh plums, and sprinkled with a buttery sugar streusel. The streusel melts and bakes into the cake so well. It's perfectly sweet in all the right ways!

    Step by step instructions

    Here is how to make and bake this Plum Coffee Cake. You will need a 9x9 pan lined with parchment paper, an electric handheld mixer, three mixing bowls, and a spatula.

    Step 1 – Mix dry ingredients. In a medium-sized bowl, add in the flour, baking powder, and salt. Mix together and set aside.

    Step 2 – Make streusel. In a bowl, add the butter, flour, and white sugar. With your hands or a fork, mix together until a crumbly streusel forms. Set in the fridge to chill as the cake batter is made.

    Step 3 - Cream butter and sugar. In a large bowl, add the softened, butter, white sugar, and lemon zest. Cream on high for 2-3 minutes until well combined, scraping the sides of the bowl as needed.

    Step 4 - Add eggs and vanilla. Add the eggs in, one at a time, beating for about a minute in between each addition. Scrap the bowl as needed. Then add in the lemon juice and mix in.

    Step 5 - Add dry ingredients. Mix in the dry ingredients gently with a spatula, just until a soft cake batter forms.

    Step 6 - Layer. Spread the cake batter on the bottom of the pan evenly. Add the sliced plums on top. Then sprinkle the streusel.

    Step 7 - Bake. The cake bakes for 45-60 minutes, or until a toothpick inserted comes out clean. Allow to cool, slice, and enjoy!

    Ingredients
     
     

    For the streusel

    • 2 tbsp unsalted butter softened
    • 1/2 cup all-purpose flour
    • 3 tbsp white sugar

    For the cake

    • 3/4 cups unsalted butter softened
    • 1/2 cup white sugar
    • 1 3/4 cups all-purpose flour
    • 1 1/4 tsps baking powder
    • 1/4 tsp salt
    • 3 large eggs room temperature
    • 1 tbsp vanilla
    • Lemon zest from 1 small lemon about 1-2 tsp
    • Lemon juice from 1 small lemon about 1-2 tsp

    Instructions
     

    • Preheat the oven to 350℉/176℃. Line a 9x9 pan with parchment paper and set aside. Slice the plums into quarters and set aside.

    For the streusel

    • Combine softened butter, flour, and white sugar with your hands or a fork until a crumbly streusel forms. Place in the fridge to chill.
      2 tbsp unsalted butter, 1/2 cup all-purpose flour, 3 tbsp white sugar

    For the cake

    • In a bowl, add the flour, baking powder, and salt. Stir together and set aside.
      1 3/4 cups all-purpose flour, 1 1/4 tsps baking powder, 1/4 tsp salt
    • In another bowl, add the butter, lemon zest, and white sugar. Beat on medium-high speed for 2-3 minutes or until light and fluffy, scraping the sides of the bowl as needed.
      3/4 cups unsalted butter, 1/2 cup white sugar, Lemon zest from 1 small lemon
    • Add in one egg at a time, beating very well between each addition (about a minute in between each addition). Scrap the sides of the bowl as needed. Then add in the lemon juice and vanilla, and continue beating until combined.
      3 large eggs, Lemon juice from 1 small lemon, 1 tbsp vanilla
    • Add in the dry ingredients. With a spatula, gently fold just until a smooth cake batter forms and no dry streaks appear. Do not over-mix!
    • Transfer and spread evenly into the prepared pan. Add the plums evenly on top. Finish with sprinkling the streusel.
    • Bake for 45-60 minutes. The cake will be ready when a toothpick inserted comes out clean. Allow to cool, slice, and enjoy!
