Step by step instructions
Here is how to make and bake this Plum Coffee Cake. You will need a 9x9 pan lined with parchment paper, an electric handheld mixer, three mixing bowls, and a spatula.
Step 1 – Mix dry ingredients. In a medium-sized bowl, add in the flour, baking powder, and salt. Mix together and set aside.
Step 2 – Make streusel. In a bowl, add the butter, flour, and white sugar. With your hands or a fork, mix together until a crumbly streusel forms. Set in the fridge to chill as the cake batter is made.

- 1/2 cup all-purpose flour
- 3 tbsp white sugar
For the cake
- 3/4 cups unsalted butter softened
- 1/2 cup white sugar
- 1 3/4 cups all-purpose flour
- 1 1/4 tsps baking powder
- 1/4 tsp salt
- 3 large eggs room temperature
- 1 tbsp vanilla
- Lemon zest from 1 small lemon about 1-2 tsp
- Lemon juice from 1 small lemon about 1-2 tsp
Instructions
- Preheat the oven to 350℉/176℃. Line a 9x9 pan with parchment paper and set aside. Slice the plums into quarters and set aside.
For the streusel

- Add in the dry ingredients. With a spatula, gently fold just until a smooth cake batter forms and no dry streaks appear. Do not over-mix!
