These Peanut Butter Oatmeal Bars are so easy! There is an oatmeal base that is also used as a sprinkle on top. Inside there is an entire layer of peanut butter! They are chewy from the oatmeal, and creamy from the peanut butter. If you love peanut butter, you will love these bars.

These peanut butter oatmeal bars are so delicious!
To make things easier the base and topping are both the same simple oatmeal mixture. Then an entire layer of peanut butter is spread on top, and more oatmeal mixture is sprinkled on top. It gets baked, and voila!
The hardest part about these bars is waiting for them to cool down. They are SO good!

Brown sugar – I like to use dark brown, but light works too.
Flour – I used all-purpose flour for this recipe.
Peanut butter - I used a creamy peanut butter. You can also use a crunchy peanut butter or any other nut butter you like. Just make sure not to use natural peanut butter.
Oats - Rolled oats are used in this recipe for their hearty texture. These oats are also called old-fashioned or large-flake oats in some stores. Don't use quick oats, they are thin and the consistency will not turn out the same.

Step by step instructions
Here is how to make and bake these Peanut Butter Oatmeal Bars. You will need a 9×9 baking pan lined with parchment paper, one mixing bowl, and a spatula.
Step 1 – Prep. Grease the pan. For easy removal of the bars, place parchment paper on the bottom and 2 sides of the pan. Gently grease the other two sides and then set aside. Melt the butter and allow it to cool as you prep the rest of the ingredients.
Step 2 – Mix ingredients. In a large sized bowl, add in flour, oats, cinnamon, baking soda, baking powder, and brown sugar. Mix to combine.


Step 3 - Add in butter. Add in the melted and slightly cooled butter and mix together. A crumbly but workable mixture will form.


Step 3 - Press into pan. Press about 3/4's of the mixture into the bottom of your pan (I reserved 1 1/2 cups for the top part). You can press this down firmly into your pan using a glass or your hands. Make sure it is evenly distributed and packed down.
Step 4 - Bake. Bake the base for 10 minutes at 350F to set the base. See below photo for references.

Step 5 - Peanut Butter layer. Once baked, remove from oven and scoop peanut butter onto the base. Gently spread it, making an even layer. Since the base is hot, the peanut butter will melt, making it easier to spread.
Step 6 - Top with remaining crumble. Sprinkle your remaining crumble evenly on top. Add back into the oven for an additional 18-22 minutes or until the crumble is a light golden brown colour. Mine took 20 minutes.


Step 7 - Cool. Allow the bars to cool completely. They have to completely cool in order to slice since the peanut butter is melted, or else it will get messy quick!
Step 8 - Serve. Once cooled, slice and enjoy! These bars stay good on your counter in an airtight container for 3 days or in the fridge for up to 1 week.

Expert Baking Tips
Here are a few baking tips from my kitchen to yours!
- Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
- Use rolled oats. Quick oats are smaller and don't cook the same!
- Use creamy peanut butter. Don't use natural peanut butter, it's too runny!
FAQ
Can I bake these in a different pan?
Yes, you can bake them in an 8x8 pan but they will be thicker and bake longer.
Can I use any nut butter?
Yes! As long as it is creamy 🙂
Can I use gluten-free flour?
Yes. Use a 1 for 1 GF flour if required to substitute for the all-purpose one.

- 1/2 tsp cinnamon

- 3/4 cups dark brown sugar
- 1 1/2 cups creamy peanut butter
Instructions
