    Baked Chocolate Peanut Butter Oatmeal Bars are wholesome oat bars that are perfectly sweet and salty in every bite! Made with creamy peanut butter, hearty oats, and gooey chocolate, these chewy bars are so delicious. They are easy to bake, full of flavour, and a simple treat everyone will love.

    Okay these oatmeal bars are so delicious! If you know me, you know I love a good oat bar. Now add in the chocolate peanut butter combo and I am IN!

    These bars have the best chewy texture from the oats. They are full of flavour and sure to please any crowd!

    I like the make these oatmeal bars ahead of time and indulge on them throughout the week. They work great as a kids snack, breakfast bar, or a grab and go on your way out the door.

    Step by step instructions

    Here is how to make and bake this Peanut Butter Chocolate Oatmeal Bars. You will need a 9x9 baking pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.

    Step 1 - Mix together dry ingredients. In a medium-sized bowl, add in flour, rolled oats, baking soda, baking powder, cinnamon, salt, and cornstarch. Mix together and set aside.

    Step 2 - Whisk wet ingredients. In a large bowl, add the melted and slightly cooled butter, oil, white sugar, and brown sugar. Whisk together until smooth.

    Step 3 - Add wet ingredients. Whisk in the eggs and vanilla. Then add in the creamy peanut butter and whisk until smooth.

    Step 4 - Add dry ingredients. Combine together just until a soft cookie dough batter forms. Do not over-mix!

    Step 5 - Add chocolate chips. Mix in the chocolate chips a few times - do not over-mix!

    Step 6 - Transfer and bake. Spread evenly in the prepared pan. Add extra chocolate chips on top if desired (optional). Bake for 40-50 minutes or until a toothpick inserted comes out clean.

    Allow to cool, slice into squares, and enjoy! These bars are so delicious and simple to bake!

    Ingredients
     
     

    • 1/2 cup unsalted butter melted and cooled
    • 2 tbsp oil*
    • 3/4 cups creamy peanut butter
    • 1/4 cup white sugar
    • 3/4 cups dark brown sugar
    • 2 large eggs room temperature
    • 1 tbsp vanilla
    • 1 1/2 cups all-purpose flour
    • 1 1/4 cups rolled oats 100g
    • 1/2 tsp cinnamon
    • 1/2 tsp baking powder
    • 1/4 tsp baking soda
    • 2 tsp cornstarch
    • 1/4 tsp salt
    • 3/4 cups semi-sweet chocolate chips

    Instructions
     

    • Preheat the oven to 350℉/176℃. Line a 9x9 (or 8x8) baking tray with parchment paper and set aside.
    • In a bowl, add the flour, oats, baking soda, baking powder, cinnamon, cornstarch, and salt. Stir to combine and set aside.
    • In another large bowl, add the white sugar, brown sugar, oil, and melted butter. Whisk to combine for 1-2 minutes until smooth.
    • Add in the eggs and vanilla, and continue whisking. Then add in the peanut butter and whisk until smooth, scraping the sides of the bowl as needed.
    • Add the dry and wet ingredients together gently with a spatula until a soft dough forms. Do not over-mix!
    • Mix in the chocolate chips a few times until evenly combined - once again, do not over-mix!
    • Transfer into the prepared pan and spread evenly. Top with extra chocolate chips if desired.
    • Bake for 40-50 minutes. The bars are ready when a toothpick inserted in the middle comes out clean. Mine took 45 minutes.

    Notes

    Oil* - Any oil works. Using both butter and oil helps add extra moisture into the bars as they dry out from the oats. If you don't have any oil, use 2 tbsp (28g) of melted butter.
