Here is how to make and bake this Peanut Butter Chocolate Oatmeal Bars. You will need a 9x9 baking pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.
Step 1 - Mix together dry ingredients. In a medium-sized bowl, add in flour, rolled oats, baking soda, baking powder, cinnamon, salt, and cornstarch. Mix together and set aside.
Step 2 - Whisk wet ingredients. In a large bowl, add the melted and slightly cooled butter, oil, white sugar, and brown sugar. Whisk together until smooth.
Step 3 - Add wet ingredients. Whisk in the eggs and vanilla. Then add in the creamy peanut butter and whisk until smooth.
Step 4 - Add dry ingredients. Combine together just until a soft cookie dough batter forms. Do not over-mix!

Chocolate Peanut Butter Oatmeal Bars
Ingredients
- 1/2 cup unsalted butter melted and cooled
- 2 tbsp oil*
- 3/4 cups creamy peanut butter
- 1/4 cup white sugar
- 3/4 cups dark brown sugar
- 2 large eggs room temperature
- 1 tbsp vanilla
- 1 1/2 cups all-purpose flour
- 1 1/4 cups rolled oats 100g
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 2 tsp cornstarch
- 1/4 tsp salt
- 3/4 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 350℉/176℃. Line a 9x9 (or 8x8) baking tray with parchment paper and set aside.
- In a bowl, add the flour, oats, baking soda, baking powder, cinnamon, cornstarch, and salt. Stir to combine and set aside.
- In another large bowl, add the white sugar, brown sugar, oil, and melted butter. Whisk to combine for 1-2 minutes until smooth.
- Add in the eggs and vanilla, and continue whisking. Then add in the peanut butter and whisk until smooth, scraping the sides of the bowl as needed.
- Add the dry and wet ingredients together gently with a spatula until a soft dough forms. Do not over-mix!
- Mix in the chocolate chips a few times until evenly combined - once again, do not over-mix!
- Transfer into the prepared pan and spread evenly. Top with extra chocolate chips if desired.
- Bake for 40-50 minutes. The bars are ready when a toothpick inserted in the middle comes out clean. Mine took 45 minutes.
