Start the day off with a slice of this scrumptious Peach Coffee Cake! It has sweet peaches and hints of cinnamon in every bite. The cake is perfectly soft and fluffy with a buttery sugar streusel on top too! There's seriously no better way to start the day.

I am so excited to share this recipe! It is one of my favourites for peach season.
This peach coffee cake has the best crumb. The peaches perfectly sweeten the cake and add an amazing texture too.
It has a 3 ingredient buttery sugar streusel sprinkled on top before baking, which melts and crisps up as it bakes. It is so good!
Step by step instructions
Here is how to make and bake this peach coffee cake. You will need a 9×9 baking pan lined with parchment paper, 3 mixing bowls, a spatula, and a whisk.
Step 1 – Prep. For easy removal of the cake, use parchment paper. Slice the peaches and set aside.
Step 2 - Make streusel. In a medium-sized bowl, add flour, softened butter, and white sugar. Mix with your hands until a streusel forms. Place into the fridge to chill while the cake batter is made.
Step 3 - Mix dry ingredients. In a bowl, add the flour, cinnamon, cornstarch, baking soda, baking powder, and salt. Stir to combine and set aside.
Step 4 - Whisk fats and sugar. In a large bowl, add the melted butter, oil, and white sugar. Whisk for 2-3 minutes.
Step 5 - Add eggs and vanilla. Whisk in the eggs and vanilla for another 2 minutes until well combined, scraping the sides of the bowl when needed.
Step 6 - Add in sour cream. Whisk in the sour cream.
Step 7 - Add in dry ingredients. Mix in the dry ingredients gently just until no flour streaks appear.
Step 8 - Peaches. Add 1 tbsp of flour on the peaches and evenly coat them in the flour. Then add them into the batter and stir a few times to incorporate.
Step 9 - Layer. Transfer into the prepared pan and spread evenly. Add a couple extra peach slices on top (optional). Then sprinkle the streusel on top.
Step 10 - Bake. Bake the peach cake for 40-50 minutes or until a toothpick inserted comes out clean.
FAQ
How do I store this cake?
This peach coffee cake is best served fresh within the first two days. You may store it in an airtight container in the fridge for up to 1 week.
Can I use frozen peaches?
Fresh peaches are much more ideal. If you want to use frozen, allow them to thaw. Then drain the liquid, and pat them down dry with a paper towel. Still dust them in 1 tsp of flour before adding them into the batter.

Ingredients
For the cake
- 1 3/4 cups all-purpose flour + 1 tbsp for dusting
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp cornstarch
- 1/4 tsp cinnamon
- 2/3 cups white sugar
- 1/2 tsp salt
- 1/3 cup oil
- 1/4 cup butter melted and slightly cooled
- 1 tbsp vanilla
- 1/2 cup sour cream room temperature
- 2 large eggs room temperature
- 2 large peaches sliced
For the streusel
- 1 cup all-purpose flour
- 6 tbsp unsalted butter softened
- 1/3 cup + 1 tbsp white sugar
Instructions
- Preheat the oven to 350℉/176℃. Line a 9x9 baking tray with parchment paper and set aside. Slice the peaches into smaller pieces (see photo above for reference) and set aside. Melt the butter and allow it to cool as the rest of the ingredients are being measured.1/4 cup butter, 2 large peaches
For the streusel
- In a bowl, add the white sugar, butter, and flour. Mix together with your hands until a crumbly streusel forms. Place in the fridge to chill as the cake batter is being made.1 cup all-purpose flour, 6 tbsp unsalted butter, 1/3 cup + 1 tbsp white sugar
For the cake
- In a bowl, add the dry ingredients; flour, cornstarch, baking soda, baking powder, salt, and cinnamon. Stir to combine and set aside.1 3/4 cups all-purpose flour, 1 1/4 tsp baking powder, 1/2 tsp baking soda, 1 tbsp cornstarch, 1/4 tsp cinnamon, 1/2 tsp salt
- In a large bowl, add the melted butter, oil, and white sugar. Whisk for 2-3 minutes until well combined.2/3 cups white sugar, 1/3 cup oil, 1/4 cup butter
- Add in the eggs and vanilla. Continue whisking.2 large eggs, 1 tbsp vanilla
- Whisk in the sour cream, scraping the bowl as needed.1/2 cup sour cream
- Add in the dry ingredients, and gently with a spatula mix it together to form a soft cake batter.
- Into the bowl with the peaches, sprinkle 1 tbsp of flour. Mix around and evenly dust the peaches in the flour.2 large peaches
- Add the peaches into the batter and stir to combine, don't over-mix!
- Transfer the batter into the prepared pan and spread evenly. Add a couple extra peach slices on top (optional). Sprinkle streusel on top evenly.
- Bake for 40-50 minutes, or until a toothpick inserted comes out clean.
- Allow to cool, slice, and enjoy!
