    One Banana Banana Bread

    Make this delicious banana bread with only 1 banana! Sometimes we have a leftover browning banana on our counter and don't know what to do with it, so make this banana bread! It is soft and full of yummy flavours!

    This banana bread is a great sweet treat to make ahead of time! It also acts as a delicious breakfast or on-the-go snack.

    If you have one ripening bananas on your counter and don't want to stick it in your freezer, try this banana bread!

    Ingredients Notes

    • All-purpose flour – This flour is used for this banana bread.
    • Bananas – 1 large banana is used. The riper the banana, the better and sweeter the banana bread will be.
    • Butter - I used unsalted butter. This will be softened.
    • Cornstarch – Used to enhance the texture.
    • Cinnamon - Adds some depth to the flavour!
    • Egg – Must be at room temperature before starting your bake.
    • White sugar - Make sure you're using granulated sugar, and not icing sugar.

    Step by step instructions

    Here is how to make and bake this One Banana Banana Bread. You will need an 8x4 loaf pan lined with parchment paper, 3 mixing bowls, a spatula, and an electric hand-held mixer.

    Step 1 – Prep. Line your loaf pan down and up 2 sides with parchment paper and then grease the sides that aren't lined. If you need a recommendation, this is my favourite loaf pan Mash the bananas and set aside.

    Step 2 - Cream butter, oil, and sugar. In a large bowl, add the butter, oil, and white sugar. Mix on medium speed for 2-3 minutes until well combined.

    Step 3 - Add in egg. Add the egg and continue mixing, making sure to scrape the sides of the bowl when needed. Mix for another 1-2 minutes.

    Step 4 - Add in bananas, sour cream, and vanilla. Mix in the rest of your wet ingredients in. It's ok if it curdles.

    Step 5 - Add in dry ingredients. Slowly add the dry ingredients in two additions, mixing until just combined between each addition. I used a spatula for this part.

    Step 6 - Transfer. Add the batter into the prepared pan and spread evenly.

    Step 7 - Bake. Bake the banana bread for 35-45 minutes or until a toothpick inserted comes out clean. Mine took 40 minutes exactly.

    Allow the banana bread to cool, then slice and enjoy!

    This banana bread stays good on the counter for 3 days in an airtight container and in the refrigerator for up to 1 week!

    Expert Baking Tips

    Here are a few expert baking tips from my kitchen to yours

    • Make sure all of your wet ingredients are at room temperature. It’s important or else the ingredients won’t work the way we want them too together.
    • The riper the banana the better. They should have lots of black spots on it!

    Yes, but just be aware that your banana bread will not be as tall and will bake for less time.

    Ingredients
     
     

    • 1 banana about 1/2 cup, very ripe*
    • 1/3 cup butter softened
    • 3 tbsp oil
    • 1 large egg room temperature
    • 1 tsp vanilla
    • 1/4 cup sour cream room temperature
    • 1 1/4 cup all-purpose flour
    • 1/2 cup white sugar
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp cinnamon

    Equipment

    Instructions

    Banana - Make sure your banana is very ripe. This recipe is not sweet, so the riper your banana, the sweeter they will be. Also, it should be roughly 1/2 cup, a bit more or less isn't a big deal!
