This Chocolate Plum Cake combines sweet plums with the perfect amount of chocolate for the ultimate decadent summer cake! Drizzled with some dark chocolate on top, it's seriously THE cake to bring to any backyard dinners this season.

Growing up, chocolate covered plums were the sweet treat in my household (also known as Śliwka w czekoladzie in polish). Plums are one of the most popular fruits we use in Poland, so they're a comfort food for me.
I took my love for chocolate and love for plums and created this decadent chocolate plum cake (Czekolada Ciasto ze Śliwkami). It's perfect sweet, and the plum chocolate combo isn't one that comes to mind often, but it's absolutely incredible.

Butter – This will be softened.
Chocolate - Dark chocolate is melted and drizzled on top of the cake after baking. You can also use semi-sweet chocolate or milk chocolate.
Cocoa powder - Make sure to use a good quality unsweetened cocoa powder as this will directly affect the flavour and outcome of your bake. This is the one I use and recommend.
Eggs – Make sure they’re at room temperature before beginning.
Flour – All-purpose flour is used in this recipe.
Baking powder - Helps the cake rise.
Salt - Helps balance the sweetness.
Plums - Fresh plums are used in this recipe. I used 6 plums total. Slice them into small pieces.
Vanilla – Using a good quality vanilla is key to adding flavour to the cookies!
White sugar - Granulated white sugar is used in this recipe. Make sure it's white sugar and not powdered sugar.
Step by step instructions
Here is how to make and bake this chocolate plum cake. You will need a 9×9 square pan lined with parchment paper, two medium mixing bowls, a spatula, and an electric handheld mixer.
Step 1 – Prep. Grease the pan. For easy removal of the cake, place parchment paper on the bottom and 2 sides of the pan. Gently grease the other two sides and then set aside. Cut each plums into 8-10 small pieces each.
Step 2 – Mix dry ingredients. In a medium sized bowl, add in flour, cocoa, baking powder, and salt. Stir to combine and set aside.
Step 3 – Cream the wet ingredients. In a large bowl, add softened butter, vanilla, eggs, and white sugar. Beat on medium speed for 2-3 minutes until it’s light and there are no sugar granules when you feel it between your fingers. Make sure to scrap the sides of the bowl.
Step 4 – Add in dry ingredients. Mix in the dry ingredients and using a spatula, gently fold until a batter forms. Do NOT overmix! The batter will be thick.
Step 5 – Spread. Add the batter into the prepared pan and spread evenly in the pan. I recommend using your fingers for this as it’s a thick batter.
Step 6 - Add plums. Place the plums skin down on the cake. It's important they are skin down or else to much moisture will come out of them while they bake. See photos for reference.
Step 7 - Bake. Bake the cake for 35-45 minutes. It took me 42 minutes exactly. Allow the cake to cool. Then, melt chocolate and drizzle on the cake. Allow to set, slice, and enjoy!
This cake is best eaten day of but can also sit on your counter in an airtight container for up to 3 days. I don't recommend freezing this cake as the texture changes when you do.
Expert Baking Tips
Here are a few expert baking tips from my kitchen to yours
- Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
- It's really important to place the plums skin down on the cake! This way less moisture gets baked into the cake itself and the texture doesn't change!
- Do not over-mix! A big reason cakes don’t rise or turn out tough is because the batter is over-mixed. Once you see no flour streaks, stop mixing.
- Use fresh, not frozen. Make sure to use fresh plums!
FAQ
Can this recipe be doubled?
Yes, bake it in a 9×13 pan and increase the baking time by checking in on it after the 35 minute mark. It should take anywhere from 40-55 minutes to bake.
Can I use an 8x8 pan?
Yes! The cake will be a bit thicker.
Can I use other fruits?
Absolutely! This cake would be delicious with blueberries, raspberries, strawberries, or peaches!
