These are a cross between a brownie and a bar. They don't have quite the full brownie texture, but also aren't like regular chewy bars. The perfect mix, and they are soo delicious!
These bars come together in one bowl with a few simple ingredients. They are soft and gooey in the middle, are made with lots of cocoa powder, and loaded with melty chocolate chips.
This one is for my chocolate lovers who love chocolate with their chocolate! Let's get to baking!

Step by step instructions
Here is how to make and bake these Chewy Double Chocolate Brownie Bars. You will need a 9×9 baking pan lined with parchment paper, 3 mixing bowls, a whisk, and a spatula.
Step 1: Mix dry ingredients. In a bowl, add the flour, sifted cocoa, baking powder, and salt. Stir to combine and set aside.
Step 2: Whisk butter and sugar. In a bowl, add the butter, oil, brown sugar, and white sugar. Whisk until well combined (2-3 minutes).
Step 3: Add in eggs and vanilla. Whisk in the eggs, yolk, and vanilla until well combined.

Step 4: Add dry ingredients. Mix the dry ingredients in with a spatula just until a soft brownie batter forms, do not over-mix!

Step 5: Mix in chocolate chips. Add the chocolate chips and fold in a few times, don't over-mix!

Step 6: Transfer and bake. Spread evenly in the pan and sprinkle extra chocolate chips on top. Bake for 25-30 minutes or until a toothpick inserted in the middle is fudgy, but not raw with batter.
Allow to cool, slice, and enjoy!

FAQ
How do I store these bars?
They are best served fresh and stay good on the counter for 3 days.
Are these supposed to be fudgy?
They're a good cross between fudgy and chewy! Not quite a really fudgy brownie, but also not a chewy classic bar.
What kind of cocoa should I use?
The best kind of cocoa to use is unsweetened cocoa powder, I used the 365 Organic Cocoa Powder and love it! Make sure to sift your cocoa before adding it in.
My bars came out dry?
This is most likely due to over-baking. After 22 minutes, begin to check with a toothpick in the middle to see if they are baked. For fudgier middles, bake for less time. For more well-done bars, bake longer.
