These Brown Butter Chocolate Chip Cookie Bars are chewy gooey bars that come together in one bowl. They are really easy to make and require no chill time!

These are thick chewy cookie bars full of brown butter, brown sugar, and gooey chocolate in every bite.
They're way easier to make than cookies too! Instead of scooping each cookie, you just put the dough into a pan and bake!

Ingredients Notes
Here are a few staple ingredients used in this recipe. Full details and measurements are in the recipe card below.
All-purpose flour – Standard all-purpose flour works best here. Any other flour won’t work.
Butter – I always use unsalted for baking. This will be melted, browned, and slightly warm when using.
Brown sugar – I used light brown sugar. Dark brown sugar works as well.
Chocolate – I used semi-sweet chocolate chips. You can also use a chopped up milk and dark chocolate bars.
Eggs - Make sure it is at room temperature before beginning.
Vanilla - Use high quality vanilla.

Step by step instructions
Here is how to make and bake these brown butter chocolate chip cookie bars. You will need an lined 9x9 baking pan with parchment paper, two large mixing bowls, a spatula, and a whisk.
Step 1 – Prep. Grease the pan. For easy removal of the brownies, place parchment paper on the bottom and 2 sides of the pan. Grease again and then set aside.
Step 2 - Mix dry ingredients. In a large bowl, add in flour, cornstarch, baking soda, and salt. Mix together and then set aside.
Step 3 - Brown the butter. Check out the recipe card for full details on how to brown butter. Allow it to cool for 20 minutes before beginning your baking. The butter should be warm, but not hot when beginning.
Step 4 – Whisk wet ingredients. In a large bowl, whisk warm brown butter, brown sugar, and white sugar. Whisk until smooth and glossy (about 2-3 minutes).


Step 5 - Add in eggs and vanilla. Whisk in egg, yolk, and vanilla.


Step 6 - Add in dry ingredients. Mix in the dry ingredients using a spatula. Don't over-mix! Just mix until almost all of the flour is completely incorporated.


Step 7 - Add in chocolate chips. Mix in the chocolate chips until evenly distributed, don't over-mix!


Step 8 – Transfer and bake. Place the batter into the prepared pan and spread evenly. Add with a sprinkle of extra chocolate if desired. Bake for 25-30 minutes. If you want a chewier cookie bar, underbake the bars. The middle will be slightly puffy and underbaked, and the edges will be a light golden brown. They will continue to bake from the hot pan though. If you want regular cookie bars, bake them until a toothpick inserted in the middle comes out clean.

Expert Baking Tips
Here are a few baking tips from my kitchen to yours!
- Use high-quality chocolate chips. These ones are my favourite.
- Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
- These cookie bars should be slightly underdone when finished baking. They will continue baking as they cool in the hot pan.

FAQ
Can I bake these in a different pan?
Yes, you can bake them in an 8x8 pan but they will be taller and thicker.
Do I have to brown the butter?
No! If you don't brown the butter, use 3/4 cups.
Why don't you chill the cookie dough?
This cookie dough is placed and baked in a pan, so it doesn't have any space to spread like it would if it was scooped into cookies on a cookie sheet. So there's no need to chill the dough!
Can I scoop these into cookies?
I haven't tried using this dough in cookie form so I can't say. If you want to make cookies, try baking Classic Chocolate Chip Cookies instead.

Ingredients
- 3/4 cup + 1 tbsp unsalted butter melted, browned, and slightly cooled
- 1/2 cup white sugar
- 1/2 cup light brown sugar or dark brown sugar
- 1 egg room temperature
- 1 egg room temperature
- 1 tbsp vanilla
- 1 tsp cornstarch
- 1/2 tsp salt
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1 cup semi-sweet chocolate chips plus more for topping
Instructions
- In a 9x9 baking pan, place parchment paper on the bottom and 2 sides of the pan. Grease the sides and then set aside. Preheat oven to 350°F.
- Brown the butter. Melt the butter in a medium sized pan over medium heat. Once it melts, it will crackle, then become foamy – continue mixing the butter while this happens to prevent burning. The butter will go from melted to golden brown quickly, and you’ll know it’s almost done when the aroma of browned butter arrives. The whole process should take about 5 minutes! Once golden, remove from heat and transfer to a glass bowl. Let the butter cool for 15-30 minutes while you prep on the rest of the recipe.3/4 cup + 1 tbsp unsalted butter

The middle will be slightly puffy, and the edges will be a light golden brown. If you want regular cookie bars, bake them when a toothpick inserted comes out clean.
