These soft and chewy Brown Butter Apple Blondies are so rich in flavor. They're chewy apple blondies that come together in one bowl, and are loaded with nutty brown butter, soft apples, and cinnamon spice in every bite. Once baked, they're generously glazed with a sweet, thick, and creamy maple glaze.

These chewy apple blondies are absolute perfection! They’re soft, packed with flavor, and delightfully chewy. Browning the butter adds such a deep, nutty richness that pairs beautifully with the sweet, tender apples and warm spices!

After baking, the bars get drizzled with a maple glaze that consists of maple syrup, brown butter, and powdered sugar. It combines everything perfectly together while adding a bit of sweetness too!

They are great to bake up for a dessert table, a family gathering, or a cozy weekend bake. They are also a treat you can bake year-round, not just for fall!

Whether you serve them with a scoop of vanilla bean ice cream, or eat them as is, these apple blondies will be the highlight of your day.I love these blondies so let's get to baking!

    Step by step instructions

Here is how to make and bake this Brown Butter Apple Blondies. You will need an 9×9 square pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.

Step 1: Brown the butter. Check the recipe card for all the browning butter details. I always suggest doing this first so it can cool as the rest of the ingredients get prepped!

Step 2: Chop apples. Slice and chop the apples into small cubes. Add lemon juice on top and mix it around (to prevent browning and compliment the sweet apples, optional).

Step 3: Mix dry ingredients. In a bowl, add the flour, baking powder, cornstarch, cinnamon, cloves, nutmeg, and salt. Stir and set aside.

Step 4: Whisk brown butter and sugar. In a bowl, add the brown butter and brown sugar. Whisk to combine (1-2 minutes).

Step 5: Add in eggs. Whisk in the eggs very well, for another minute or so. Then add in the vanilla and whisk it in.

Step 6: Add dry ingredients. Mix the dry ingredients in just until a soft batter forms - don't over-mix.

Step 7: Mix in apples. Add the peeled and chopped apples in and mix in a few times until well distributed - don't over-mix!

Step 8: Transfer and bake. Bake the bars for 28-36 minutes or until a toothpick inserted comes out clean. Allow to cool, then make the glaze.

Step 9: Drizzle glaze. To make the glaze, heat up the brown butter. Once it's hot, add in the maple syrup and whisk it in until smooth. Then add in the powdered sugar until desired consistency has been reached.

Drizzle on the cooled apple blondies, then allow to set and enjoy!

    Expert Baking Tips

Here are a few expert baking tips from my kitchen to yours

    • Use a gram scale. This will give you the most accurate measurements!
    • Brown the butter first. This allows it to cool in time while you prep the rest of your ingredients.
    • Use dark brown sugar. If you can, dark brown sugar carries more molasses which I find deepens the brown butter nutty flavors in these bars. Light brown sugar works as well though!
    • Slice the apples small. If they are sliced to big, they won't bake properly.

    FAQ

How do I store these bars?

Store these chewy apple blondies in an airtight container for up to 3 days, or in the refrigerator for up to 1 week!

Make the icing when you're ready to serve the blondies.

Do I have to brown the butter?

In this recipe, I would say yes! It truly makes the biggest difference.

What kind of apples work best in this recipe?

Any kind of apple works, it depends on your preference. I used a sweet apple, and added some lemon juice in it to prevent from browning and help compliment the sweetness from the apples, brown sugar, and maple syrup!

Can I bake these in a 9x13 pan?

Yes, just double the recipe! You can click the 2x option in the recipe card.

    Ingredients

    For the bars

    • 3/4 cups + 2 tbsp unsalted butter melted, browned, and cooled, divided
    • 3/4 cups dark brown sugar
    • 2 large eggs room temperature
    • 2 tsp vanilla
    • 1 3/4 cups flour
    • 3/4 tsp baking powder
    • 1/4 tsp salt
    • 1 1/2 tsp cornstarch
    • 1 tsp cinnamon
    • 1/8 tsp cloves
    • 1/8 tsp nutmeg
    • 1 large apple or 2 small, diced in small cubes (I used Honeycrisp)
    • 1 tbsp lemon juice

    For the glaze

    • 2 tbsp brown butter
    • 2-3 tbsp maple syrup or table syrup
    • 1 cup powdered sugar

    Instructions

    • Preheat the oven to 350℉/190℃. Line a 9x9 baking pan with parchment paper and set aside. Peel and chop the apples into small cubes. Add in the lemon juice and mix them around. The lemon juice will prevent them from browning, and compliment the sweetness from the apples, brown sugar, and maple syrup. Set aside.
1 large apple, 1 tbsp lemon juice
    • In a bowl, add the flour, baking powder, cornstarch, cinnamon, nutmeg, cloves, and salt. Stir to combine and set aside.
1 3/4 cups flour, 3/4 tsp baking powder, 1/4 tsp salt, 1 1/2 tsp cornstarch, 1 tsp cinnamon, 1/8 tsp cloves, 1/8 tsp nutmeg
    • Brown the butter. Add the butter into a pot on medium-high heat and stir it until it's melted. Then continue to stir for the next 2-3 minutes, until it sizzles, foams, and starts to brown. The butter is ready when the nutty aroma of browned butter has arrived, and brown specks have formed at the bottom of the pan. Transfer into a heat-safe glass to cool. Then, take 2 tbsp (28g) and set that aside for the drizzle (meaning there is 3/4 cups total for the dough, and 2 tbsp for the drizzle).
      3/4 cups + 2 tbsp unsalted butter
    • In a large bowl, add the brown butter and brown sugar. Whisk to combine (1-2 minutes) until well combined.
3/4 cups dark brown sugar, 3/4 cups + 2 tbsp unsalted butter
    • Whisk in the eggs, then whisk in the vanilla.
2 tsp vanilla, 2 large eggs
    • Add the dry ingredients in. With a spatula, gently fold just until a soft dough forms. Do not over-mix!
    • Mix in the chopped apples until well distributed - do not over-mix!
    • Transfer into the baking pan and spread evenly.
    • Bake for 28-36 minutes, or until a toothpick inserted comes out clean. Mine took 32 minutes exactly.
    • Allow to cool, then make the glaze. To make the glaze, heat the brown butter and then whisk in the maple syrup. Remove from the heat, then add the powdered sugar in until the desired consistency is reached. Drizzle over the cooled bars, allow to set, slice, and enjoy!
2 tbsp brown butter, 2-3 tbsp maple syrup, 1 cup powdered sugar

    Equipment

    9x9 Baking Pan
    Parchment Paper
    Gram Scale
    Whisk
    Spatula

    Notes

Brown sugar: Dark brown sugar is best for this recipe, but if you have light brown this will work as well. White won't work in this recipe.
Lemon juice: I freshly squeezed a lemon, but store-bought works too. Adding lemon juice helps prevent the apples from browning, while also complimenting the sweet apple and balancing the flavors evenly.
