These blueberry danishes are made using puff pastry, so they’re super easy to make! They have a blueberry jam filling and are topped with a buttery sugar streusel.

You know those delicious danishes you get whenever you go to a coffee shop? These are exactly, that, but elevated.
This recipe has only a few simple ingredients total and couldn’t be any easier. It uses a frozen puff pastry as the base, so there’s no need to panic about making danish dough.
The fresh blueberries are added into a pot with water and cornstarch, creating a gorgeous jam within minutes. This is the filling for the danish.
Last but not least, the delicious and simple 3 ingredient streusel. It's buttery, sugar, and crisps up in the oven while baking on top of the danishes. I can't get enough of it!

Why this recipe works
Puff pastry – When the pastry is baked, it turns into super buttery pastry with lots of flakey goodness.
Blueberry – Fresh blueberries are used in this recipe. Frozen will not work as they carry to much liquid and will affect the pastry bake.
Easy to make – Only 6 ingredients total!
Ingredients Notes
Blueberries – Make sure to use fresh blueberries and not frozen. You can also use raspberries, blackberries, or sliced strawberries.
Cornstarch – Helps to thicken up the blueberry jam.
Puff pastry – I get this at my local grocery store in the frozen dessert section. It usually comes in a pack of two, but I only used one sheet in this recipe.
Whipping cream - I topped the danishes off with some fresh whipped cream. I used 35% whipping cream.
Step by step instructions
Here is how to make and bake these Blueberry Streusel Danishes. You will need one tray lined with parchment paper, a knife, an electric handheld mixer, and a mixing bowl.
Step 1 – Prep. Line your baking tray with parchment paper and set aside. Remove puff pastry from freezer and allow to thaw in the fridge for at least one hour before beginning. If you have instructions on your puff pastry packaging, follow this.
Step 2 – Make the streusel. In a medium sized bowl, add flour, sugar, and cold butter. Using your hands, mix this until crumbly and combined. Set in the fridge while you make the jam.
Step 3 – Make the blueberry jam. Mix together water and cornstarch, making sure there are no clumps. Then in a pot over low heat, add the fresh blueberries. Allow it to simmer for 1-2 minutes. Add in the cornstarch water mixture and mix for another 1-2 minutes until it's thickened up. Turn the stove off and transfer the jam to a bowl to cool.
Step 4 – Prepare the pastry. Unfold the thawed pastry and place on the tray. Cut it into 4 even rectangles. Then cut each rectangle in half, making 8 total. 4 will be for the bottom, and the other 4 for the top.
Step 5 - Place jam. Add 1-2 tbsp of the jam onto each of the 4 rectangles. Make sure to leave a 1 cm border all around.
Step 6 - Add the top. Take the puff pastry pieces and place on top. Then take a fork and firmly press down, combining the two together. Make sure it is sealed correctly or else the jam will leak out (Some of mine did leak out!).
Step 7 - Sprinkle streusel. Add a heaping amount of streusel on top of each danish.
Step 8 - Bake. Bake the danishes for 20-25 minutes at 350°F. They will be ready when the puff pastry has risen and is nice and golden. If you want your streusel to be golden brown, set your oven to broil for 1-2 minutes after baking the danishes.
Step 9 - Toppings. Whip 35% heavy whipping cream (Or used store-bought) and then place on top of the danishes along with some more blueberry jam. Enjoy!
Expert Baking Tips
Here are a few expert baking tips from my kitchen to yours
- The puff pastry has to be cold before baking. If the puff pastry is warm, it will be hard to work with. I thawed mine in the refrigerator for 1 hour before beginning, and in the meantime I made the jam and streusel. This way the assembly went quickly once the puff pastry was ready to cut and fill.
- Use fresh blueberries, and not frozen.
- Make sure to cool the jam completely before adding it into the danishes.
- Keep the streusel in the fridge while you make the rest of the danishes!

Do I have to add the filling?
Yes! This is a blueberry danish.
Do I have to use blueberries?
Nope! Feel free to use any fresh berry.
The jam came out of my danish?
It's important to properly seal each danish well before baking them. I like to use a fork and firmly make indents all around. I've also had my jam come out, so don't stress to much about it!

- 3 tbsp white sugar
- 1/2 cup flour
