These Blueberry Butter Swim Biscuits are buttery soft biscuits that are so easy to make. They have juicy blueberries and a sweet lemon glaze. No electric mixer or biscuit cutter required!
These are my first butter swim biscuits on the blog and definitely not the last. They were so incredibly easy to make I was shocked!

What are butter swim biscuits?
Butter swim biscuits are exactly what they sound like. They get their name because the dough 'swims' in the butter as it bakes. Melted butter is poured on the bottom of the pan, and then the dough is added and spread on top. As it bakes, the butter combines with the dough, creating buttery crisp edges with soft and fluffy insides!
Step by step instructions
Here is how to make and bake these blueberry butter swim biscuits. You will need a 9×9 baking pan, 1 mixing bowl, and a spatula.
Step 1: Mix white sugar and lemon zest. In a bowl, add the white sugar and lemon zest. Rub together between your fingers to combine for about 1 minute.
Step 2: Add dry ingredients. Add the flour, cinnamon, baking powder, and salt. Stir to combine.
Step 3: Add buttermilk. Pour the buttermilk in. With a spoon, gently stir until a thick batter forms. Do NOT overmix.
Step 4: Add blueberries. Mix the blueberries in gently a few times just until they are evenly mixed in.
Step 5: Layer. Add the melted butter into the bottom of the pan. Then add the batter and spread evenly. Score the unbaked biscuits into 9 even squares (3x3).
Step 6: Bake. Bake the biscuits for 20-25 minutes or until a toothpick inserted comes out clean.
Step 7: Make the glaze. As it cools, make the glaze. Combine powdered sugar, lemon juice, and lemon zest. Once cooled, drizzle, set, slice, and enjoy!
FAQ
How do I store these biscuits?
These biscuits stay good at room temperature for 2 days. They stay fresh in an airtight container in the refrigerator for up to 1 week! Please note that storing them in cooler temperatures may dry them out, so I recommend eating them fresh within the first two days.
Can I replace the buttermilk?
No. Buttermilk is essential in creating that delicious biscuit texture. If you can't get your hands on actual buttermilk, you may create it at home. Mix together 1 1/2 cups of room temperature milk with 2 tbsp of lemon juice. Allow it to sit on your counter for 10 minutes to activate before using.
Do I have to make the glaze?
No!

Ingredients
For the biscuits
- 2 1/2 cups all-purpose flour
- 3 1/2 tsps baking powder
- 1/4 cup white sugar
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 tsp lemon zest optional
- 7 tbsp unsalted butter melted
- 1 1/2 cups buttermilk* room temperature
- 3/4 cups fresh blueberries
For the glaze
- 1 cup powdered sugar
- 1/2 tsp lemon zest
- 2-4 tsps lemon juice
Instructions
- Preheat the oven to 350℉/176℃. Melt the butter and allow it to cool as the rest of the ingredients are being measured.7 tbsp unsalted butter
- In a large bowl, add the lemon zest and white sugar. Rub together between your fingers for a minute to combine and release the lemon flavours/aroma.1 tsp lemon zest, 1/4 cup white sugar
- Add the flour, baking powder, cinnamon, and salt. Stir to combine.2 1/2 cups all-purpose flour, 3 1/2 tsps baking powder, 1/2 tsp salt, 1/4 tsp cinnamon
- Add the buttermilk. Mix together until almost completely combined.1 1/2 cups buttermilk*
- Toss in the blueberries. Continue mixing until no flour streaks appear. Do not over-mix!3/4 cups fresh blueberries
- Pour the melted butter in the bottom of the pan. Then add the biscuit batter on top and spread evenly.7 tbsp unsalted butter
- Score the biscuits into 9 even pieces (3x3), making sure to reach the bottom of the pan with the knife while scoring. This will help with cutting the biscuits later.
- Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.
- While the biscuits cool, make the glaze. Combine powdered sugar, lemon zest, and lemon juice together. Drizzle the cooled biscuits with the glaze. Allow it to set, slice, and enjoy!1 cup powdered sugar, 1/2 tsp lemon zest, 2-4 tsps lemon juice
