    Blueberry Banana Upside Down Cake

    This is THE ultimate summer cake. The blueberries are caramelized and baked at the bottom of the pan and then the cake is flipped over after baking to reveal an extra soft and decadent cake.

    Blueberries are probably one of my favourite fruits to bake with. I mean, they're so delicious and easy to work with!

    I also love baking with bananas because let's be real...when do we not have browning bananas on your countertop haha!

    This is my first upside down cake I've ever made, and definitely not the last!

    The blueberry juices soak into the cake as it bakes and it is just so dang good. Let's get to baking!

    Why this recipe works

    Blueberries - Fresh berries are sprinkled at the bottom of the pan and soak beautifully into the cake as it bakes.

    Bananas - The perfect way to use up any browning bananas on your counter!

    Easy to make - Everything comes together in one bowl.

    Summer - This is the perfect cake to bring to any backyard dinner party this season!

    Ingredients Notes

    All-purpose flour – This flour is used for the cake and cannot be substituted for any other.

    Butter - This will be melted.

    Bananas – 3 large very ripe bananas are used. If using frozen bananas, thaw and drain any excess liquid before adding into the bowl.

    Blueberries - Make sure to use fresh blueberries. Frozen ones carry to much liquid.

    Brown sugar – I used dark brown sugar, but light brown sugar works as well!

    Eggs – Must be at room temperature before starting your bake.

    Oil – I used a flavourless oil. You can use any type of oil, but flavoured ones will slightly change the taste. You can also use melted and cooled butter instead.

    Step by step instructions

    Here is how to make and bake this blueberry banana upside down cake. You will need a 8 or 9 inch cake pan lined with parchment paper, a large mixing bowl, a spatula, and a whisk.

    Step 1 – Prep. Grease the pan. For easy removal of the cake, place parchment paper along the entire bottom of the pan. Grease the sides and then set aside.

    Step 2 – Whisk wet ingredients. In a large bowl, whisk oil, brown sugar, bananas, vanilla, and eggs.

    Step 3 – Add in dry ingredients. Toss in flour, cinnamon, baking powder, baking soda, and salt. Mix until no dry streaks appear. This will be a runny batter.

    Step 4 - Mix butter and brown sugar. In a small bowl, stir together the butter and brown sugar.

    Step 5 - Layer. Take the butter sugar mixture and spread it along the bottom of your prepared pan. Then sprinkle the fresh blueberries on top. Make sure it is even.

    Step 6 - Add banana batter. Take the batter and spread it evenly on top of the blueberries.

    Step 7 - Bake. Bake the cake for 45-50 minutes or until a toothpick inserted comes out clean. Allow to cool completely, then gently flip the cake onto a plate and remove the pan. Slice, and enjoy!

    Expert Baking Tips

    Here are a few expert baking tips from my kitchen to yours

    • Use a gram scale. I cannot emphasize this enough! It is the most accurate way of measuring your ingredients in the kitchen. This is one of my favourites.
    • Use super ripe bananas. The more black spots they have, the better. This means they are sweeter.
    • Line the parchment paper along the bottom, but not the sides. This makes it really simple to peel off the berries after it's done baking!
    • Make sure to use a cake pan. If you use a springform pan, the butter and sugar will likely leak from the bottom. Run a knife around the cake before removing it.
    • When prepping, allow extra parchment paper to hang around the bottom of the pan. This will ensure that if there are any leaks from your cake pan, they will not drip onto the bottom of your oven while baking.

    Can I bake this in a square pan?

    Yes!

    Do I have to add blueberries?

    No, you can just use this recipe as a banana bread.

    How do I flip the cake without breaking it?

    Allow it to cool so it's warm to the touch, and not super hot. This is the most important step! Then place a plate on top and gently flip it over. Peel off the parchment paper, and viola! Serve warm with vanilla ice cream or by itself.

    Ingredients
     
     

    • 1 cup mashed bananas approx 3 medium bananas
    • 1/2 cup oil
    • 1 tbsp vanilla
    • 2 eggs room temperature
    • 3/4 cups dark brown sugar or light brown sugar
    • 2 cups flour
    • 1 3/4 tsps baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp cinnamon optional
    • 1/2 tsp salt
    • 2 tbsp butter melted
    • 1/4 cup dark brown sugar or light brown sugar
    • 2 cups blueberries

    Equipment

    Cake Pan
    Parchment Paper
    Gram Scale
    Cookie Scooper
    Spatula
    Whisk

    Instructions
     

    • Grease the pan. For easy removal of the cake, place parchment paper on the bottom of the cake pan. Then grease the sides. Preheat oven to 350°F. Mash the bananas and set aside as you prep the rest of your ingredients.
      1 cup mashed bananas
    • In a large bowl, add oil, vanilla, mashed bananas, brown sugar, and eggs.
      1/2 cup oil, 1 tbsp vanilla, 2 eggs, 3/4 cups dark brown sugar, 1 cup mashed bananas
    • Add in the flour, baking powder, baking soda, cinnamon, and salt. Using a rubber spatula, gently fold it in until a soft batter forms. It will be runny.
      2 cups flour, 1 3/4 tsps baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, 1/2 tsp salt
    • In a small bowl, combine the melted butter and brown sugar. Place evenly along the bottom of the prepared pan. Then sprinkle blueberries on top. Make sure it is all evenly distributed.
      2 tbsp butter, 1/4 cup dark brown sugar
    • Take the cake batter and gently spread it on top of the blueberries, making sure not to disturb the layer of them. I like to use a cookie scooper for this as I find it's effective and not messy. Spread evenly.
      2 cups blueberries
    • Bake for 45-50 or until the cake come out clean with a toothpick inserted in the middle.
    • Allow to cool, then gently run a knife around the cake pan. Flip the cake upside down onto a flat surface like a plate or a cake stand. Peel the parchment paper off to reveal the gorgeous blueberry layer! Then slice, and enjoy!
